Spring has Sprung!
We’re happy to wake up to the chatter of birds, the morning sunshine on the spring-green leaves & the smell of the earth coming alive. When the blossoms sit heavy on our peach trees, when kale springs back to life in our little hoophouse, as days extenuate into long evenings with light slowly draining out of the day, we know spring is here to stay. We take a great big sigh that we made it through another winter. We draw energy from the season, shake off the cold weather doldrums and hop back to life! We hope you will have a healthy and peaceful spring, that you have the chance to spend time outdoors, doing the things you love.

Springtime across the country is a time of rebirth and new beginnings. Many of us are recommitting to healthy lifestyle habits with renewed energy and dedication. Over the past decades there has been a burgeoning of organic farmers, eschewing chemical fertilizers and working hard to build robust soil and rotate crops and incorporate novel approaches to pest control. We are all the beneficiaries of this dedication. In addition, there is now
research to show that organic food production
and consumption has potential benefits for human health.

Recipe: Breakfast Protein Muffins

This recipe was given to us by one of the most wonderful women in the world. She came before us and paved the way for naturopathic medicine in America, Cathy Rogers ND. The last time I saw Cathy, she gifted me with a batch of these yummy, nutritious treats! Enjoy!
From Cathy: These tasty muffins are high in protein and contain no grains. They are mildly sweet, with no added sugar. I like the combination below, and there are many variations – chopped walnuts pecans, blueberries, raspberries, lemon zest, unsweetened chocolate (chocolate nibs), different spices. Try what you like!
This recipe makes 10-12 muffins. I double this recipe and freeze the muffins in a storage container.
