Flavor Profile: Similar to celery with a hint of parsley. Although its exterior is rough, its inner texture is creamy-smooth and easily pureed.

Applications: We love celery root for comfort food: Soups, stews, mashes/purees, slaw, root vegetable hash, gratins, borscht, shepherd's pie, remoulade, and baked chips/fries. It also has an extremely strong shelf life and can hold up in the fridge for months!

Health Benefits: Excellent source of Vitamins C and K which can help support heart and bone health. Great low-carb alternative to potatoes #FoodSwap!
Celery Root Puree with Sliced Mixed Ninja Radishes
Celery Root, Fennel, and Apple Salad with Apple Cider Vinaigrette
Flavor Profile: Crisp and refreshing with black licorice notes.

Applications: Roast/grill the bulbs whole or halved or thinly shave for a succulent salad component. Be sure to save the fronds and use as an edible garnish to give your dish that extra licorice-y flavor!

Health Benefits: The selenium in fennel stimulates production of killer T-cells which can improve the immune system.
Roasted Fennel with Parmesan
Fennel, Endive, and Prosciutto Salad from Ember Restaurant , one of our absolute favorite local spots!
Flavor Profile: Earthy-sweet

Applications: Roast, boil, pickle, or serve raw in salad or on a crudité plate. To remove the skins, roast or boil the beets until fork tender. Then blanch in ice cold water and the skins will slip right off. Dice and marinate in your choice of vinaigrette.

Health Benefits: Beets contain a bit of almost all the essential vitamins and minerals in a very low amount of calories. They can also help keep blood pressure in check and fight inflammation.
Roasted Baby Beets

Flavor Profile: Familiar sweetish brassica flavor to broccoli and cauliflower with a bit of a tangy bite.

Applications: Enjoy raw or sauteed in a salad or power bowl. Use the leaves for low-carb wraps or bake them to make kale chips.

Health Benefits: Like beets, kale is very nutrient dense and has been referred to as a superfood. It is loaded with antioxidants, an excellent source of vitamin C, can help lower cholesterol and may reduce the risk of heart disease.
Sauteed Green Kale
Lacinato Kale Salad with Carrots, Watermelon Radish and Squash
Flavor Profile: Sweet with hints of broccoli and radish. Peel its tough outer skin to get to a smooth interior, similar in texture to jicama but with more flavor!

Applications: Kohlrabi is great in soups/stews, gratins, braised, pureed, and roasted. With its juicy and delicious inner flesh, it can also be enjoyed raw. Larger bulbs can even be stuffed like a squash, with cheese, bacon, peppers, etc.

Health Benefits: Similar to fennel, kohlrabi also promotes a healthy immune system. It is rich in fiber and can reduce the risk of heart disease, certain cancers, and inflammation.
