It hasn't been feeling quite like it, but Spring has arrived! Even with the rainy weather and continued cold fronts, our crews have been working hard. They've been busy completing projects for clients to enjoy their outdoor transformations in the warm weather soon to come, breaking ground on new projects, and enhancing front landscapes to freshen up curb appeal. While we keep an eye out for Spring blooms and our hopes high for blue skies, we hope you get inspired to get your backyard ready for enjoying the season.
When it comes to the spring season in Indiana, there is only one thing you can predict; that the weather will be unpredictable. Congratulations to our Employee of the Month, Eddie Hernandez !
This month we are happy to honor Eddie Hernandez as our Employee of the Month! Eddie leads crews in our Mowing Division but he contributes far more than that to Property Pros. Eddie is bilingual which helped our team immensely as we hired and onboarded new team members for the 2022 season. He has also been busy tiling our office restrooms and helping out with other improvements to keep our shop in tip top shape, such as putting together wheelbarrows for our maintenance division. Eddie is always willing to help us out in any way he can, and we are so thankful to have him on our team.
Spring Veggie Frittata

Whether gathering for an Easter celebration or enjoying a weekend brunch with family and friends, this crustless cousin of the quiche is sure to deliver fresh Spring flavor and happy stomachs.
Ingredients
  • 10 large eggs
  • ½ cup yogurt, or dairy-free yogurt
  • 2 tablespoons olive oil
  • 1 leek, white and light green parts chopped
  • ½ pound thin asparagus, trimmed and cut into 1/2-inch pieces
  • 1 cup frozen peas
  • 1 cup (packed) baby spinach
  • salt and pepper, to taste
  • 4 ounces goat cheese, or feta/other cheese
  • Optional garnish: fresh chopped fresh dill and parsley
Instructions

  1. Preheat the oven to 400F. In a large bowl, whisk the eggs, yogurt, salt and pepper and set aside.
  2. Heat the oil in a 10-inch oven-safe skillet over medium heat. Add the leek and saute for 3-4 minutes.
  3. Then add the asparagus and saute another 1-2 minutes.
  4. Then add the frozen peas, baby spinach, salt and pepper, and saute another 1-2 minutes, or until the spinach is wilted. Remove 1/3 of the vegetables to a plate (optional, but it makes for a prettier frittata), and make sure the remaining half of vegetables is evenly spread out.
  5. Pour the eggs over the half of the vegetables in the pan. Cook on the stove for 2-3 minutes.
  6. Add the remaining vegetables on top, then dollop with the goat cheese. Transfer to the oven and cook for 15-20 minutes, or until the eggs are set.
  7. Garnish with additional herbs before serving.
