As the rising temps melt away the snow and ice and we move into the rainy spring season, it's important as a homeowner to take stock of how your property is handling the excess water. Protecting the integrity of a home's foundation by ensuring water is flowing away from the property will save you time, money, and hassle in the future. These signs are clear giveaways of potential drainage issues that may need attention:

  • Sitting surface water on your property
  • Mulch or soil washing out around the home
  • An uneven surface that slopes towards your home's foundation instead of away from it

Additionally, draining issues could be simply remedied by unclogging gutters or burying downspouts. More complicated cases may require installing a dry creek or even re-grading the yard. This month we are excited to honor our Maintenance Crew Leader, Renee Bailey as our employee of the month!
Renee has been with us for 6 years now and throughout these colder months, she's been jumping in to help us with any task that's asked of her. With the maintenance season gearing up, she's been helping us make improvements around our shop, ensuring we have a smooth start to the year! On top of all of that, she's been preparing our 2021 maintenance contracts, sourcing perennials for future planting, and even doing some snow removal on some of her properties. With her impeccable work ethic, attention to detail, and consistent, positive attitude, it's no wonder she is a fan favorite with our many of our clients!

Beef and Guinness Stew
Bring out your inner Irish spirit with this hearty, savory slow-cooked stew! (Plus, it's not a bad excuse to pour yourself a Guinness while you wait!) Perfect for St. Paddy's Day weekend or an easy weeknight meal.
INGREDIENTS

  • 2 tbsp olive oil
  • 2.5 lb beef chuck, boneless short rib or any other slow cooking beef (no bone)
  • 3/4 tsp each salt and black pepper
  • 3 garlic cloves, minced
  • 2 onions, chopped (brown, white or yellow)
  • 6 oz bacon or pancetta, diced
  • 3 tbsp flour
  • 14.9 oz Guinness Beer
  • 4 tbsp tomato paste
  • 3 cups (750 ml) chicken stock/broth (or beef broth)
  • 3 carrots, peeled and cut into 1/2" thick pieces
  • 2 large celery stalks 1" pieces
  • 2 bay leaves
  • 3 sprigs thyme (or sub with 1 tsp dried thyme leaves)

Instructions:
  1. Cut the beef into 2" chunks. Pat dry then sprinkle with salt and pepper.
  2. Heat oil in a heavy based pot over high heat. Add beef in batches and brown well all over. Remove onto plate. Repeat with remaining beef.
  3. Lower heat to medium. If the pot is looking dry, add oil.
  4. Cook garlic and onion for 3 minutes until softening, then add bacon.
  5. Cook until bacon is browned, then stir in carrot and celery. 
  6. Add flour, and stir for 1 minute to cook off the flour.
  7. Add Guinness, chicken broth/stock and tomato paste. Mix well (to ensure flour dissolves well), add bay leaves and thyme. 
  8. Return beef into the pot (including any juices). Liquid level should just cover.
  9. Cover, lower heat so it is bubbling gently. Cook for 2 hours - the beef should be pretty tender by now. Remove lid then simmer for a further 30 - 45 minutes or until the beef falls apart at a touch, the sauce has reduced and thickened slightly.
  10. Skim off fat on surface, if desired. Adjust salt and pepper to taste. Remove bay leaves and thyme.
  11. Serve with creamy mashed potatoes!!
