Grieve not, nor speak of me with tears,
but laugh and talk of me as if I were beside you.
I loved you so.
It was heaven here with you.
Rainier joined our family in the fall of 2016. He wound his way into our hearts right away, especially Heidi's.
Both Heidi and Rainier liked nothing more than to play in the snow (as all good Berners should)!
Playing on the couch was their second favorite thing to do. There will surely be a hole in Heidi's heart, too.
Hello dear friends and clients,

As you can see by the above tribute, we lost our beautiful and sweet tempered Rainier on April 13. He had pancreatitis and had ruptured his L7 but in the end, he passed from cardiac arrest. Our hearts are broken. He has left such a big hole in our lives and Heidi's, too. They were great friends. Since I cry every time I think about him, I am going to do what I know best and that is work. There are things to celebrate. Spring is here and life has returned to the Flathead Valley.

From the look of the business already happening, it's going to be a busy season. Glacier Park is anticipating a record number of tourists and is requiring reservations for travel to Going-to-the-Sun-Road (read about it here). As for real estate, we have a very different dynamic from the market surge in 2006. All over Montana and the west, there is a pent up demand for properties and very little inventory. I have some clients buying properties "sight unseen" just to be in Montana. If you are even considering a move, let me know. You are in a very robust market. Maybe you are downsizing, upsizing, wanting to be closer to grand kids, or changing locations. My experience, consistent record and excellent negotiating skills will successfully lead you toward a sale at the right price. I welcome your calls, texts or emails. Denise's Cooking Corner - Mark Bittman’s Cheese Souffle
Over time, I find that I prefer savory souffles over sweet ones and want them to get the main dish attention that I think they deserve!

Ingredients
4 tablespoons (1/2 stick) butter, plus more for greasing
1/4 cup all-purpose flour
1 1/2 cup milk, warmed until hot to the touch
6 eggs, separated
Salt and pepper
Dash cayenne or 1/2 teaspoon dry mustard
1/2 cup grated Cheddar, Manchego, Roquefort, Emmental, and/or other melting cheese

Instructions
Grease a 2-quart or other deep baking dish with butter. Put 4 tablespoons butter in a medium saucepan over medium-low heat. When the foam subsides, stir in the flour and cook, stirring, until the mixture darkens, about 3 minutes.

Turn the heat to low and whisk in the milk, a bit at a time, until the mixture is thick. Let cool for a few minutes, then beat in the egg yolks, sprinkle with salt and pepper, cayenne or mustard, and the cheeses.
When you are ready to bake the souffle, heat the oven to 375 degrees F. Use a stand or hand-held mixer to beat egg whites until stiff peaks. Fold in about a third of the egg whites into the base. Use a rubber spatula to scoop the mixture from the bottom and fold it over the top; don‘t worry about deflating the whites too much at this point. Add the rest of the egg whites, using the same folding technique, but more gently. Incorporate the whites well into the base, but if light streaks remain, that’s OK. If the batter goes flat, it’s overmixed and your souffle won’t rise much; the results will be more like a puffy quiche, so not a total disaster.

Transfer the batter to the prepared baking dish. Bake until the top is brown, the sides are firm, and the center is still quite moist, about 30 minutes. Use a thin skewer to check the interior; if it comes out quite wet, bake for another 5 minutes. If it is just a bit moist, the souffle is done. Serve right away, spooned directly from the baking dish.

Individual cheese souffles: Instead of using a single baking dish, put 4 to 6 buttered 1 1/2 to 2-cup ramekins on a rimmed baking sheet. Divide the batter evenly among them. The cooking time may be reduced by as much as half; start checking after 15 minutes.
Denise's Book Corner - Call of the Wild by Jack London
If you know me, you know that all dogs are good dogs. They are close to my heart and so this was a natural re-read for me this spring while Rainier was struggling. For those of you who have not read The Call of the Wild, it is about “Buck,” a California dog who went from a pampered pet in a rich home to a leader in the rough and tumble Klondike Gold Rush era of the 1890s.

Stolen and taken into the Yukon Territory, Buck’s character changes as he becomes hardened under the brutal conditions as leader and master among dogs. As the story progresses, he turns toward his savage instincts, yet the bond with his human remains miraculously strong.
Novels narrated from a dog’s point of view are rare and Jack London seems to possess an intuition of this dog's life and heart. This insight may have come from intimacy and communion with sled dogs during his time in Alaska and may be partially based on personal experience. In any case, the novella gives us a bird’s eye view of a turbulent time in Alaska's history when sled dogs were in peak demand.

Call of the Wild was at the top of the list of banned book in Yugoslavia and Italy for being "too radical" and burned by the Nazis in the 1930s. Many of my favorite books were banned including, Animal Farm, The Lorax and The Grapes of Wrath. I find banning books to be a deplorable tactic that we should stay vigilant to prevent.
