Welcome back to Stookey's! In this month's, Here's How, our monthly newsletter, we are highlighting a recent Preservation Award that Club Moderne was given by the Art Deco Society of California. In addition, our friend and photographer Dennis Hearne is In the Spotlight. We are showcasing our cocktail of the month and are reminding readers of the upcoming events at Stookey's Club Moderne!

Stookey's Club Moderne:
Preservation Award Recipient
It was with much pleasure and excitement that those of us at Stookey's Club Moderne accepted a Preservation Award from the Art Deco Society of California at their annual Ball last month! And what a party it was!
Held at the iconic Bimbo’s 365 Club, the Ball had a theme based on the
Forbidden City
, one of the most famous San Francisco Chinatown nightclubs of the late 30’s to 50’s. The Forbidden City had daily entertainment and dancing and was often visited by tourist and locals alike as well as movie stars and jazz greats including Bing Crosby, Bob Hope and Duke Ellington, to name a few. The story of the club is well documented in the movie Forbidden City U.S.A., directed by another Preservation Award winner, Arthur Dong.
At the Ball, we were graced with the presence of the Grant Street Follies, a dance troupe of several original dancers from Chinatown’s nightclubs of the 40’s -70’s, who performed a beautiful dance routine with spinning parasols and delightful outfits. There were several other acts, including the Deco Belles doing Art Deco period dance routines and couples performing elaborate swing dance moves. Later, guests danced the night away to the sounds of Don Neely’s Royal Society Jazz Orchestra.
It was quite an honor to be among nine separate awardees this year; as we said at the award ceremony, the Club would not be what it is today without the support of those who love and support us and patronize our establishment! Thank You!

Over the years Tim Stookey has had a South Side in his cocktail repertoire. The South Side consists of gin, mint, lime juice and sugar -- roughly the equivalent of a gin mojito. Tim thought about how adding whipped egg whites enhances the flavor of particular cocktails. So when researching sours and fizzes, Tim was elated to find a recipe for a South Side Fizz in an old publication (The Official Mixer’s Manual, 1934, Patrick Gavin Duffy).
The South Side Fizz is a refreshing Spring/Early Summer cocktail that marries the gin botanicals with the herbal splendor of the mint - but the magic happens when egg whites are added…. The addition of egg whites changes the way your mouth tastes the drink - immediately accentuating the base flavors but also creating more of a soft and creamy texture. Bubbly foam offers a lovely sensation as it passes through the lips onto the tongue. Egg whites today are safe for consumption through pasteurization and definitely add a layer of richness without the caloric lactose elements of dairy cream or milk.
Recipe
1 ½ oz London Dry Gin (Beefeater, Tanqueray, etc)
¾ oz fresh lime juice
5 mint leaves
½ oz 2:1 simple syrup (2 parts sugar to 1 part water)
½ oz egg white
splash of soda water
Put all ingredients in cocktail tin/shaker except the soda water. Shake 30 seconds without ice. Add a scoop of ice and shake until cold (approx. 10 Seconds). Strain into a tall glass over ice. Add soda water and garnish with a mint sprig.

Dennis Hearne - Photographer
Dennis Hearne - a long-time resident of San Francisco's North Beach community and an NEA grant recipient -- is the subject of our In The Spotlight segment!
Dennis loves photography and it shows. A great friend of Stookey's since he stopped in one night last summer, Dennis really enjoys photographically documenting the many neighborhood characters that live in and around San Francisco. Lately he has been busy photographing the architecture of the city, as well as capturing by camera the local musicians as they play in the various venues around town.
Born in Vermont, Dennis is a son of an army veteran, and as such, grew up in several locales including Italy. When he came of age, there was an opportunity to be a part of the US military effort in Vietnam, of which he declined and decided instead to attend college. He had seen photos of San Francisco’s North Beach that reminded him of Italy. He crossed the country to San Francisco, with the goal of enrolling in the San Francisco Academy of Art, where he eventually earned a BFA and MFA in photography. He has lived in the City ever since.
Dennis has been recognized with National Endowment Grants to photograph life along Baja’s Highway One, among many other documentary projects. His clients have included Adobe and Charles Schwab among several corporate accounts, as well as many, (if not most) of the high-ranking politicians of the SF Bay Area, including Governor Jerry Brown, Attorney General Kamala Harris, US House Minority Leader Nancy Pelosi, and US Senators Feinstein and Boxer. This time of the political cycle has him flying to various locales on more or less a drop of a hat…. It’s a living. His true passion, however, is photographing our San Francisco….
Dennis has a knack for capturing the moment photographically, as his technique is unobtrusive and relaxing. His equipment is excellent, but it’s really his knowledge of the equipment, and his experience with light, and angles that makes Dennis exceptional.
Those of us in and around the Club Moderne often make an effort to recall an era where people wore hats, ties and gloves as a matter of routine; we very much appreciate Dennis’ quiet professionalism and generosity with his time and talent. We consider him a true friend of Stookey’s Club Moderne.
