Memorial Day weekend - the unofficial start of summer, and the promise of long, lazy days to come. This year we're especially grateful for the return of family gatherings, bbqs with friends, and simple pleasures like concerts and baseball games. While Memorial Day is a time to celebrate, it's also a time to remember. Our deepest thanks to all those who sacrificed their lives in service to our country.

PLEASE NOTE: In light of the Commonwealth of PA's announcement that Covid restrictions will be lifted beginning May 31st, the Easton Farmers' Market will be eliminating many of our directional, and pedestrian controls starting this Saturday. Rest assured that we will continue to adapt as needed and always do everything possible to maintain a safe, orderly shopping environment.
Fully vaccinated individuals are not required to wear masks. Please be respectful of all shoppers and remember that each person's situation is unique. Above all, bee kind.

Cabbage Throw Farm is offering an ever widening array of veggies. Exciting new additions this week include spring snap peas, broccolini, and organic strawberries grown by neighboring Comeback Farm.
Purple Kohlrabi is the featured vegetables this week. And while this weird and knobby veg usually stands as the butt of many veggie jokes, kohlrabi is surprisingly delicious. It is widely used as a sweet, juicy and colorful crunch to salads and can also be enjoyed on its own, sliced and dressed with olive, sea salt and herbs.
PEPPERY KOHLRABI SLAW
Peel and thinly slice kohlrabi, finely shred spring greens(suggested: gem lettuce or baby arugula), and cut French breakfast radish into quarters. Dress with lemon juice and peppery horseradish dressing.
Dressing:
175 g mayonnaise (substitute Greek yogurt)
59 g grated horseradish
2 hearty tsp of cracked black pepper

Yay! Picnics are back, friends are back, and pie was always here.
Should you be venturing out for fun or to commemorate the contributions of those who gave all, pie still fits the bill.
Enchilada Pie will serve 4-6 with lots of chicken, cheese, and a vibrant sauce with tomatillos, poblanos, and cilantro. Potato Spinach, and Ricotta Pie is lovely for a picnic, or Beef and Mushroom, to eat around the fire. There will also be Chicken Cock-a-Leekie 6” deep dish pies, enough for two with a side or two, or one very hungry soul.
We’ll also bring Blueberry Cobbler Pies, Strawberry Margarita Freezer Pies, some assorted tarts, and of course, Apple Turnovers and Cinnamon Brown Sugar Pop Tarts.
