You only need three ingredients to make this creamy and refreshing dessert. It's perfect for when you want something cold and sweet to snack on in the summer. Just be sure you have the time to completely freeze the banana and strawberries so that they blend to the right consistency.
2 large bananas, ripe
1½ cups unsweetened frozen strawberries, sliced
½ tsp vanilla extract
Cut the bananas into 1-inch chunks and place them in a large zip-close plastic freezer bag. Seal and freeze until frozen solid, 2–3 hours.
Place the frozen bananas and strawberries in a food processor; puree, scraping down the sides of the bowl with a rubber spatula. Add the vanilla extract and pulse to combine. Serve immediately or, for a firmer texture, transfer to a container and freeze until ready to serve; allow to soften for about 10 minutes at room temperature. Serve garnished with a few fresh berries and mint sprigs, if desired.
