Good Morning


The talk around town is about this heat wave. I think in general though, the farmers are excited.


The crops - like field corn and beans - badly need the heat units to catch up. The farmer who grows our non-gmo corn didn't get his last planting in until June 15 due to the wet spring. June 5 is the cutoff for insurance. With a shot of rain this past weekend and some serious heat, he's hoping the corn catches up some to where it should be by now.


For the produce, the heat will help sweet corn, tomatoes, eggplant, and peppers along. Leafy greens, like lettuce and chard, will need extra attention to cool them down quickly.


And for the livestock, the farmers need to make sure to reduce stress on the animals. Move them early, provide shade and plenty of water. A dairy cow's performance is tightly bound to temperature. Many dairies will use misting fans to keep the cows cool. Here at WVF, one of my big challenges is keeping the broilers - meat chickens - cool. We moved them before 6 AM this morning to get them onto fresh grass and some activity before the heat strikes.


But across the board, the farmers are celebrating a chance to make dry hay. Read below to learn more. (above...one of the neighbors mowing hay with an old fashioned sickle bar mower and a team of horses. The implement between is called a "fore-cart." It's a gas motor mounted on a chassis to turn a PTO shaft on the mower. It's a very Amish contraption.)


Lastly, this week is an exciting week with lots of promotions and what we call "Open to the Public." This is where we invite back old members and new faces to celebrate in the bounty our local farmers provide. Please share with a friend and ask them to try us out this week.

While not the most seasonal pie, there are few desserts more American than Apple Pie. So we went with that for the big holiday weekend.


A hefty apple pie with thinly sliced apples stacked deep under a sweet and crunchy oat and brown sugar streusel topping. Baked in our signature flaky crust of whole wheat flour, local butter, and house rendered lard.

Chef Jeff has been working on some delicious items for your grilling life. We are sampling a few more in the morning and will update the site if we have other options. For now, there are two I'm really excited about.


Buttermilk Ranch Dressing - $6 per half pint


Fresh dill and herbs suspended in a thick ranch dressing. We start by using A2 heavy cream for body and fermenting it into creme fraiche. That's our cultured buttermilk so to speak. We then emulsify with homemade mayo, cider vinegar, herbs and seasonings.


Enjoy on a salad, as a dip for veggies or wings, and so much more.


Lacto-Fermented Asparagus Relish - $5 per half pint


Asparagus, garlic, and onion, fermented for two weeks and chopped for a tangy relish great for serving on a brat, veggie burger, as an alternative to salsa verde on steak, or simply cleansing the palette.

Make Hay when the Sun Shines

The old saying, "make hay when the sun shines" is accurate. With sunshine and temps in the 90s, dry hay can be made in a few days. This is crucial for the horse farmers who need it for their work horses.


For my farmhand and I, we don't make dry hay. Instead, I do all "wrapped hay," which is wrapped in an air-tight bag to make silage. It essentially ferments, preserving the hay and nutrients.


We are excited about a chance to literally do "hay in a day." A hay crop absorbs the suns energy and stores it in the leaves during the day. Usually cutting hay mid-afternoon optimizes energy in the crop. As it lays on the ground, the crop looses nutrients. The goal is to dry it down as fast as possible and get it baled ASAP.
This traps nutrients and energy. While we can bale wetter than dry hay, we still need to lose about 50% of the moisture to get a good fermentation and avoid spoilage issues.


One technique is called "hay in a day," literally when you mow, rake, and bale in 1 day. This week, with temps approaching 100, this will be easy. The 2nd cutting hay isn't as thick as 1st cutting.


We'll mow at noon, ted it (spread it out and fluff it up) immediately, then let it rest in the sun until about 6 pm. We'll then rake and bale, with the goal to finish right around sun down. When done right, the feed value is incredible! For quality grassfed beef, this is a must.
