Meet Ceri (pronounced Kerry) our new family member, an eight week old Welsh Corgi. She and Heidi have become good friends, although it took a week or so. I think Heidi enjoys her spunk (and there is plenty of it). John was a bit reticent at first, but she has won him over. This is one of Ceri's rare quiet moments! I love dogs and came across this heart-warming story about Cooper and Bella, two strays who were found wandering on a busy highway. They were saved by a couple from the UK and it warmed my heart. With home prices at record high, my clients are asking me when is the crash coming. Of course, I have no crystal ball, but it looks like this is not a repeat of the last housing crash and the market seems to be defying common sense. Experts say there’s no reason to prepare for a crash landing this time around. The out-of-control prices are because there are many more buyers than there are properties for sale. Denise's Cooking Corner - Our Favorite Key Lime Pie
INGREDIENTS
For the crust:
11 (2 1/4x4 3/4") graham crackers
2 tablespoons sugar
1 1/2 teaspoons ground cinnamon
Pinch kosher salt
6 tablespoons unsalted butter, melted
For the filling:
1 (14-ounce) can sweetened condensed milk
4 large egg yolks
7 tablespoons fresh key lime juice
2 tablespoons fresh lemon juice
For the topping:
1 cup chilled heavy cream
2 tablespoons powdered sugar
Special Equipment:
A 9" pie pan

PREPARATION
Make the crust:
Place rack in the center of oven and preheat to 350°F. Pulse graham crackers, sugar, cinnamon, and salt in a food processor until fine crumbs form. With the motor running, drizzle in melted butter and process until well-combined. Transfer mixture to pie pan and press into bottom and up sides with a flat-bottomed measuring cup. Bake crust until golden brown and set, 8–10 minutes. Transfer to a wire rack and let cool to room temperature, about 15 minutes.

Make the filling and bake pie:
Whisk condensed milk and yolks together in a large bowl. Add key lime and lemon juice and whisk until well-combined (mixture will thicken slightly). Pour filling into crust and bake until center is just set, about 15 minutes. Transfer pie to a wire rack and let cool completely (filling will set as it cools), about 1 hour. Transfer to refrigerator and chill until cold, at least 1 hour.

Make the topping:
When ready to serve, whip cream with a whisk or electric mixer to very soft peaks. Sprinkle sugar over cream and continue whipping until it holds stiff peaks. Dollop cream in center of pie (leaving at least a 1" border of visible pie filling) and serve.

Do Ahead
Pie (without topping) can be made, loosely covered, and chilled for up to 2 days.

My note: Nothing says summer to me like a light and tart key lime pie. The secret to its deliciousness is a hint of fresh lemon juice. Try this one and I know you will agree!

“Don’t look back, that’s not where you’re going.” Such was the philosophy of Annie Wilkins, a 63- year- old Maine farmer who had just lost her farm and was given only two years to live. But Annie had a dream. She wanted to see the Pacific Ocean before she died.

Ignoring her doctor, she bought a cast-off brown gelding named Tarzan and with her faithful mutt, Depeche Toi, she headed south with an unfailing belief that Americans would treat a stranger with kindness. It was 1954, television, suburbs and freeway construction was changing the face of America.
 
Through big cities and small towns, she met ordinary people and celebrities—from Andrew Wyeth (who sketched Tarzan) to Art Linkletter and Groucho Marx. She received many offers—a permanent home at a riding stable in New Jersey, a job at a gas station in rural Kentucky, even a marriage proposal from a Wyoming rancher.

Just as she believed, Annie and her four-footed companions inspired an outpouring of neighborliness. Did she make it to dip her feet in the Pacific Ocean? Well, you’ll just have to read this amazing and true autobiographical memoir of a determined lady in a rapidly changing landscape. I loved it!
