Dear Sarah Bakes Eaters & Sharers:


It’s coming. Shorter days, school buses practicing their runs. September! I’m so sorry if that makes you forlorn, but it means that we are at the height of great summer fruits and veggies at our farmers’ market and thus, in my BAKED GOODIES! Truth be told, however, I cheated, twice – wait, what?

 

In addition to using zucchini (Pleasant Corner Produce) and peaches (Frecon Farms) from my market friends, I grabbed organic blueberries from Trader Joe’s because I really need them for a cornmeal buttermilk cake that I think you’ll love (and it’s gluten free). Last month I shared that our daughter was diagnosed with celiac disease and that I was going to work hard in the kitchen to make delicious GF treats. I know I found a winner with this Blueberry Buttermilk Cornmeal Cake.

 

I also took on the challenge this summer to create a delectable gluten free version of the family birthday cake – a chocolate layer cake with milk chocolate frosting and toffee bits. After four iterations, and research on tricks for success, I baked a triumph! Rebecca now has a celebratory cake in her freezer awaiting the big day. I’m only sorry that I won’t get a slice!

 

My other cheat?

The “raspberry” in the Razzy Blondies does not come from a dimply, seedy fruit found in a farmers’ market green papered box, but a “fruit couverture.” It gets its flavor from freeze-dried raspberries and its smooth texture from cocoa butter and is sweet from sugar. The Razzy Blondies have a very balanced flavor profile – they aren’t profoundly fruity! I recently tasted this ingredient from high-end chocolate maker, Valrhona, and it blew me away and super-charged my imagination. This couverture, a disc the size of a quarter, is intensely berry-like in flavor, melts red so it looks like the fruit itself, and is naturally gluten and dairy free. I bought a bag not knowing exactly what I was going to do. The product’s name is “Inspiration” and sure enough, it inspired me! The Razzy Blondies are also studded with Callebaut chocolate chips, toasted walnuts, and toffee chips. Wishing you inspiration, too!

 

Bonus! If you see the last movie of the night at the Bryn Mawr Film Institute, the folks at the concession stand bag up the extra popcorn and leave it on the counter for anyone to take home! I went to see Cookie Queens the other night; it follows four ambitious and charming Girl Scout Cookie sellers – let’s talk about it when you stop by on Saturday!
