Josh's Favorite Salad

I'm a firm believer that salads handled with great care make great meals. I make mine by first layering the plates with spinach and mixed greens, tearing the leafs by hand to make them easily combine with the rest of the ingredients. Add thinly sliced cucumber and cooked chicken breast (again, torn by hand to make it extra bite-sized). That's the base. Now we add salt, pepper, hand squeezed lemon, olive oil, and whichever flavor of vinaigrette seems most appealing. Next, dice tomatoes and sliced red onion (extra thin) and green onion. I usually add thinly sliced strawberries and include quarter cuts of avocado and a hard-boiled egg to four corners of the plate to add some symmetry. Toss some more salt on top as the egg and avocado will pop better when they're savory. Finally, top it all off with sliced and toasted almonds.
