RAIN OR SHINE - EBT ACCEPTED - DOG FRIENDLY

Saturday Smiles

We're all smiles after receiving some much needed rain earlier this week. There's a noticeable change in the flow of the Delaware and Lehigh rivers, and the Scott Park grass looks a little greener. Even the squirrels seem to have a spring in their step. But nobody is as happy as our farmers. Come enjoy the fruits of their labor tomorrow. Celebrate summer's magnificent bounty (lots of bulk specials for canning and freezing), and catch up with all your market friends!

Freezing Peppers

Apparently last week's tip on freezing tomatoes surprised and interested lots of customers who didn't know that freezing tomatoes was so easy! This week let's talk about freezing peppers! Every summer I freeze bell peppers to use during the winter. Just like tomatoes, peppers need minimal prep before packing them in a bag and tossing them in the freezer! I like to prep them three ways so they are easy to defrost and use-

Method #1- Chop off the top, core and pack whole into bags. These are perfect for stuffed peppers as the freezing process "par cooks" the peppers for you. Simply defrost, stuff and bake!

Method #2- Slice into thin strips and pack into bags. Throw these frozen straight into a pan for stir fry and fajitas

Method #3- Chop into small sized pieces. These are perfect for omelets, chilis and stews!

All three of these methods are ideal for bell peppers due to their thicker walls. When they defrost there's more "meat" left to them too.
