The Hunsickers are back this Saturday with corn, Corn, and more CORN, hooray! You'll find Twin Maple Farms located next to Haven Farmstead Cheese.

Eggplant is rolling in at Cabbage Throw Farm in good timing with ripening heirloom tomatoes. A great combination for a summer gratin! Cover the bottom of a casserole dish with sautéed onions, garlic and peppers. Layer slices of eggplant and tomatoes 1/4 inch thick, fanning them across the surface. Sprinkle the top with cheese, salt, pepper and a drizzle of olive oil. Bake for 40 minutes at 350 and then broil for 5 minutes!
Other summer offerings include shishito, Carmen & poblano peppers, green beans, cucumbers, and zucchini. Also cabbage, escarole, lettuce, spring mix, beets, carrots, kohlrabi, turnips, herbs and fruit from Comeback Farm.

It’s time for MELONS! To help you cool off in this summer heat, quench your thirst with juicy cantaloupe and watermelon from Phillips Farms. Or mix up your own fruit salad and include Phillips’ own peaches, nectarines, donut peaches, plums, blueberries, currants and blackberries. Also, late season red raspberries will be starting soon.
Produce at Phillips this week: field-grown beefsteak tomatoes and cherry tomatoes, corn, eggplant, green beans, zucchini, cucumbers, squash blossoms, garlic, radishes, beets, leeks, carrots, fennel, lettuce, kale, swiss chard, bok choy, basil, fresh herbs and more.

Rob and the sheep will feature a bold blue cheese this week. Pepper Dean Blue has a natural rind and tangy blue flavor making it a great companion for crackers and your favorite red wine or beer. Of course it turns any burger into an awesome blue burger!
We’ll also bring our feta, spreadable and hard cheeses and cheese curds. And sheep milk yogurt makes a great breakfast or dessert with sliced peaches or granola. We offer plain, maple and ginger yogurt.

Summer corn season is one of my favorites. I always buy extra ears of corn and freeze the kernels for a mid-winter pick-me-up. As I was prepping a batch of corn, I was reminded how much flavor is in the cobs: don’t throw them away! I’ve used them to make corn stock for an amazing chicken corn soup. This week, I used them to flavor milk for a sweet corn custard that I loaded into tart shells but you could also eat that custard directly from the fridge. (And, yes, I tested that theory just for you, dear market shoppers.)

Sweet Corn Custard Tarts
1 recipe pie dough (optional)
2-3 corn cobs
2 cups milk
1/2 cup sugar
3 Tbsp cornstarch
pinch salt
4 egg yolks
2 Tbsp butter
If using, roll out the pie dough to fit your tart tins, I used 4” tins. Blind bake the tarts and set aside. Put the milk and corn cobs in a saucepan and heat to a simmer. Turn off the heat and cover the pan to let the milk infuse for half an hour or so. Once milk has cooled, prepare an ice water bath. In a bowl, stir together sugar, cornstarch, and salt. Whisk in the yolks until smooth. Remove the cobs from the milk and discard cobs. Slowly stream the milk into the egg mixture, whisking until smooth, then return the whole thing to the saucepan. Heat over medium, stirring constantly, until custard thickens. Once it bubbles, stir for 5 more minutes, remove from heat and stir in the butter. Strain into a bowl and place in ice bath to stop the cooking. To assemble, divide the custard among the tart shells, or skip the tarts and serve as-is. I liked the custard cold from the fridge but it was also nice at room temp. Serves 6.
