TIP FROM NIC
When was the last time you checked your medications for their expiration dates? Try to do this at least twice a year - January 1st and July 1st could be good dates. When checking the over-the-counter meds, don’t forget to look at things like the antibiotic ointment too. In terms of prescription meds, dispose of expired prescription medications by bringing them to the New Canaan Police Dept. and placing them in the specially marked box in the lobby.

Couscous Salad
from Sue Scannell
Ingredients
1 cup pearl couscous
1-1/2 cups frozen corn
2 cups cherry tomatoes, halved
1/2 cup mozzarella pearls
1 avocado, diced
fresh basil or cilantro
Dressing:
1/4 cup extra virgin olive oil
2 Tbsp. white balsamic vinegar
1-1/2 Tbsp honey
1/2 tsp. Dijon mustard
salt and pepper to taste
Directions
Char corn in skillet until thawed and slightly roasted. Cook couscous following package directions. Combine dressing ingredients in a jar, cover and shake until well mixed. Place cooled corn and couscous in large bowl. Add tomatoes, mozzarella, herbs, and avocado. Drizzle with dressing and toss to coat. Enjoy immediately!
