     Here we go, it's the second week of the Seafood month of October! This week we are focused mainly in the gulf but we're also delving into one of the most sought after items of the East Coast. 
     We start this week with the pride of the Texas Gulf. Red Snapper is simply the best, hands down. It's pure Texas Gulf Gold and it can be prepared in a number of ways. Grilling, frying, sautéing, or baking all suit Red snapper perfectly. The taste of snapper is sweet, light and flaky and pairs well with cajun spices. The recipe this week features snapper with a crawfish cream sauce! 
     Flounder is our second big Texas item. Flounder are a bit unique looking being in the flatfish family. It never fails to amaze me how their eyes start out on opposite sides of their head and then migrate to the same side as as they mature. The meat they produce is some the lightest, and flakiest fish you will ever eat. Flounder pairs extremely well when stuff with blue crab meat! So keep that in mind when you come in! 
     Our third new special of the week has been known to start a mania or two.... We won't be offering live lobster, but we have a great deal on claws and tails! Each tail will come with two claws and while tails typically go for $28 per pound, these will be under $10 a pound! This is perfect if you're looking to stock up and keep them in the freezer or even if you're looking to have delicious lobster without having to cook one alive. Supply is good at the moment, but as with all of our Lobster deals it's always best to come in and get them as soon as possible! 


     They're some of the hottest items of the year, they're hard to find in town but Groomer's Seafood is loaded up with Yeti Ramblers in all sizes and also the new soft Yeti Hoppers!!

Recipe of the Week: Blackened Red Snapper with Crawfish Cream Sauce
Recipe by Arica Davis

Ingredients
Makes 4 Servings

2 lbs red snapper 
blackened seasoning (Lola's Cajun Blend works well) 
juice from 1/2 lemon 
Crawfish Sauce
1/2 lb crawfish tails
1 tbs butter
1/2 small onion, minced
5 sprigs of parsley, leaves minced
2 garlic cloves, minced
1 celery stalk, minced
1/2 small green bell pepper, minced
1/2 tbs oregano
1 tbs paprika
1/2 tsp white pepper
1/2 tsp thyme
salt & pepper to taste
1 pint heavy cream

Directions:
Coat the snapper in lemon juice then blackened seasoning, let it marinate whhile you prepare the crawfish sauce. 

Place a small pot on the stove and turn to medium/low heat. Place the butter in the pot and let it melt. Make sure your vegetables are finely minced then add them along with the seasonings to the melted butter, cook or 5 minutes or until softened. Once the vegetables have softened and add in the cream and increase to a simmer until it starts to thicken, about 5 minutes. Let it set on low heat while you cook the fish.

Heat 1 tbs of olive oil in a large skillet on medium heat. Once the pan is hot add in the fish. Cook for two minutes then flip and cook for another 3 minutes. If the fish is thicker cook it a little longer on each side. 

Place the fish on a plate and top with the crawsfish cream sauce and sprinkle with green onions. This dish goes great with a side of brown rice or cornbread. If the butter and cream are enough for you, don't worry this dish tastes great any way you eat it!
