Welcome to the latest issue of Weekly Waves!

The holiday season is approaching, and while we will gather and celebrate differently this year, may we still find ways to show gratitude and bring joy to those around us.
This has been a tough year for so many, and though the widespread impact of the pandemic continues, the great strides being made with vaccines provide hope that in the near future, some sort of normalcy will return, and with it, our dreams of traveling will become a reality.
Currently, cruise lines are hard at work adapting to the CDC’s extensive requirements and putting safeguards in place. You can trust that they are being thorough and effective. When all of this is behind us, cruising may very well be the safest way to travel, as it is the only industry being scrutinized by both the CDC AND governments worldwide.
I thank you for your business and continued loyalty. My greatest treasures are the friendships that have developed over the years. I hope you enjoy our latest Weekly Waves. I’m really excited to share with you Celebrity Cruise’s new all-inclusive program, as well as our just released 2022 Trips of a Lifetime.
Blessings to you and your families this Thanksgiving.

Waves to you and smooth sailings again soon,

Celebrity Cruises makes BIG WAVES
with their ALWAYS INCLUDED program!
To bring guests that wonderful feeling of ‘everything is taken care of, Celebrity Cruises is introducing a new approach to cruising called ‘Always Included,’ and putting an end to confusing promotions, complicated
add-ons and limited time offers. From now on Celebrity Cruises will include drinks, Wi-Fi, and tips, on every sailing, in every room, every time. It’s that simple.
For guests who want even more luxurious simplicity, Celebrity is offering the option to upgrade to one of two packages:

  • ELEVATE ($30 pp, per day) takes the package to new heights with unlimited premium drinks and adds shore excursions up to $200 per person.
  • INDULGE ($60 pp, per day) includes everything in the ELEVATE package plus unlimited streaming Wi-Fi and up to an additional $200 per person in onboard credit to spend almost any way desired.

Ciabatta Stuffing with Chestnuts and Pancetta
Italian-style Thanksgiving stuffing with rustic ciabatta bread mixed with sauteed vegetables and salty pancetta. The earthy chestnuts and savory Parmesan cheese make this dish extra special.

  • 6 tablespoons (3/4 stick) butter
  • 8 ounces pancetta, diced into 1/4-inch pieces
  • 2 large onions, finely chopped
  • 2 carrots, peeled and finely chopped
  • 3 celery stalks, finely chopped
  • 2 tablespoons chopped fresh rosemary leaves
  • 3 garlic cloves, chopped
  • 2 (7.4-ounce) jars roasted peeled whole chestnuts, coarsely broken
  • 1/4 cup chopped fresh Italian parsley leaves
  • 1 pound day-old ciabatta bread, cut into 3/4-inch cubes
  • 2/3 cup freshly grated Parmesan
  • 1 cup (or more) canned low-salt chicken broth
  • Salt and freshly ground black pepper
  • 2 large eggs, beaten to blend
Preheat oven to 350 degrees F.

Butter a 15x10x2 glass baking dish.

Melt 2 tablespoons of butter in a heavy large skillet over medium heat. Add the pancetta and saute until crisp and golden, about 10 minutes. Using a slotted spoon, transfer the pancetta to a large bowl.

Melt the remaining butter in the same skillet over medium-high heat. Add the onions, carrots, celery, rosemary, and garlic. Saute until the onions are very tender, about 12 minutes. Gently stir in the chestnuts and parsley. Transfer the onion mixture to the large bowl with the pancetta. Add the bread and Parmesan and toss to coat. Add enough broth to the stuffing mixture to moisten. Season the stuffing, to taste, with salt and pepper. Mix in the eggs.

Transfer the stuffing to the prepared dish. Cover with buttered foil, buttered side down, and bake until the stuffing is heated through, about 30 minutes. Uncover and continue baking until the top is crisp and golden, about 15 minutes longer.
