What a weekend!  Glorious weather and a fairy-tale wedding.  

We have some news from the Bakery this month.  Our Artisan for Everyday range of sliced breads is now available nationwide.  See below for more details

We also have some great ideas for gifts for Fathers' day (17 June) including Classic French cooking with Alex Mackay, Curries of the World or one of our Family cooking classes, together with details of some of our most popular baking classes and a round up of the last few places available on classes this month and early June. 
 
Finally we have a few dates when Richard is out and about so you might be able to catch him if you can't make it to the kitchen. 
IDEAS FOR FATHERS DAY

Classic French Cooking
with Alex Mackay
 
Saturday 16 June 2018 10am   £170  

  OK so officially this class is one day too early but if you are looking for a way to celebrate with your dad then this might be just the ticket.  This wonderful hands on class with Alex Mackay will celebrate some of the great French classics. Start by preparing Globe Artichokes from Provence, then bring the best flavour out of vegetables including making Aubergine Caviar and a fabulous basil pistou, make the legendary sauce, beurre blanc to accompany slow cooked salmon and fondue of leek and asparagus.

 You will then make the iconic Coq au Vin from Burgundy with puy lentils as well as Oeufs en Meurette.  Finish this tour of the classics with an indulgent Strawberry Vacherin.
 



 Alex Mackay has worked for Raymond Blanc running his cookery school at Le Manoir aux Quat Saisons and for Delia Smith running cookery workshops at Norwich City Football Club.  His book "Cooking in Provence" won The Guild of Food Writers Cookery Journalist of the Year in 2006.  He appears regularly on TV and teaches in cookery schools around the UK.

Curries of the World
with Jenny Chandler

Starting from scratch your Dad can learn how to create his own pastes and spice blends and then go on to make a Thai green chicken curry with holy basil and peanuts, a Kashmiri lamb curry, a Goan fish curry and a Trinidadian prawn roti. Add in lots of top tips on how to cook perfect rice and make some flat breads to accompany your delicious curries.  This class could set your Dad up with Friday night meals to cook for the family for years to come!  




HOOKED!  How to cook Fish & Seafood
Friday 6 July 2018 10am   £180 

 
Perfect for Dad's who usually steer away from fish because it is just too easy to get it wrong. In this summer seasonal fish special we will  show him what to look for when buying it, how to prepare it and then how to cook with it. He'll cook a range of fish and seafood dishes on the day and come away armed with lots of recipes and the skills to recreate them time after time.

For the Dad with children who haven't yet flown the nest why not send him for some quality time with the kids where we will do the clearing up afterwards.  We're firm believers in children cooking proper food and getting excited about creating good healthy meals.  so send Dad and the kids to create real suppers with a host of hints and tips. They will spend around 3 hours cooking and then sit down to eat their handiwork for lunch.

We are delighted to announce a major roll out of our Artisan for Everyday range.  The range comprises 7 loaves which will now be available in up to 300 Waitrose stores taking Bertinet bread across the country  - from Exeter to Ipswich, Brighton to Stirling -  and into central London (including the Kings Road, Marylebone, Kensington, Bayswater and Wimbledon branches) for the first time. 


The 7 loaves you will be able to get your hands on include our sliced sourdough tin loaves:

Our large white sourdough tin and malted wheat sourdough tin

Our small white sourdough tin and our malted wheat sourdough tin as well as our best selling 
seeded sourdough tin.

The range also includes two of our rustic loaves in the sliced format.

TOM KIME
Thai Masterclass
Friday 8 June 2018 £190


 
Tom Kime is a world renowned expert on Asian flavours.  This is a rare opportunity to learn from him as he makes a flying visit to the UK.

In this incredible masterclass you will learn the art of using a pestle and mortar to create fresh and vibrant thai flavours.  Tom will explain the key skill of balancing tastes so that hot, sweet, salt and sour are perfectly represented in each mouthful.  Tom will help you prepare curry paste and marinades before using them to prepare classic Thai staples such as Pad Thai, Stir Fry Beef and coconut fish curry.

Tom Kime trained under Rick Stein at The Seafood Restaurant in Padstow before working at The River Café with Jamie Oliver and Le Pont de la Tour.  He then moved to Sydney to work with David Thompson, sparking a fascination with South East Asian food.  His latest book is Thai Food Made Simple published in 2017.

Nordic Baking

With a climate suited to a range of cereals but particularly rye, the Nordic region has a wealth of baking history and a mind-blowing range of breads and treats to discover. Join Richard Bertinet to learn how to make Saffron buns, a Swedish rye and caraway bread, sourdough knäckebröd crackers as well as a bread created by our friends at Skaertoft Mill in Denmark and, to finish, prune and cardamon doughnuts.

Based on Richard's award winning book 
Dough, learn how to make and work the dough to create a range of breads from a white and an olive dough.  By the end of the day you will have created fougasse, tin loaves, bread sticks and focaccia amongst others.

Pastry , join him for this hands-on class to learn how to make a range of different pastry - sweet, salted and choux - together with a host of techniques to create stunning savoury tarts and quiches, pretty sweet tarts and choux buns, not to mention fabulously retro choux swans. This class will ensure you never have a soggy bottom ever again!

Viennoiserie Masterclass

Viennoiserie are some of the most satisfying pastries to create at home and Richard will take you through the essential skills to produce the perfect examples in your own kitchen.  Croissant, pain au chocolat and danish pastries are all on the menu as well as crème pâtissière in this extended masterclass.


Classic Patisserie

Learn to create classics worthy of the finest French patisserie in this hands on class.  Ghalid's class will show you how to master a number of techniques ranging from perfect puff pastry and mousseline cream to genoise sponge or biscuits à la cuillère .  Then you will use these skills to assemble creations which taste as stunning as they look.

Introduction to Breadmaking with Jenny Chandler

Based on Richard's award winning book Dough , learn how to make and work the dough to create a range of breads from two simple doughs. By the end of the day you will have mastered fougasse, tin loaves, bread sticks and focaccia.  This class will be taken by Jenny Chandler, our longest standing and most experienced house guest chef who has worked closely with Richard since the school opened in 2005.

Oriental Streetfood with Pamela Chen

Oriental streetfood is full of exciting flavours and healthy to boot.  Think bowls of soothing savoury sticky rice, crunchy and spicy salads, warming chicken noodle soups and tasty dim sum.  Pamela aims to demystify Oriental food by teaching you the basic rules of balancing flavours, preparing your ingredients properly, understanding marinades and presenting your dish so that the colours and textures whet your appetite.
 



Malaysian Masterclass with Ping Coombes

MasterChef Champion 2014 Ping Coombes joins us again for her popular hands on class exploring the cuisine of Malaysia.  Ping will be helping you to recreate recipes from her stunning book MALAYSIA including classics like Chicken Satay with Peanut Sauce and a no churn coffee ice cream in a deep fried milk bun inspired by her grandmother.

Macaroons are super tricky to make - impress your friends and family  with these delicious treats - try your hand at a few flavours including our favourite chocolate.

Family Lunch

Amaze and delight your family by offering to cook a family lunch.  We will get your chopping, frying and mashing skills up to scratch as you learn to make a delicious cottage pie, then whip up a scrumptious lemon meringue roulade for pud.

Mexican
31 May 2018 10am A fiesta of food.  Learn how to make a spicy chipotle salsa and green rice to go into burritos with chicken, peppers and guacamole.  Arriba! 
 
Classic Cakes 
31 May 2018 2pm
Master two classic cakes - a Battenburg and a lemon drizzle.  This hands on class will test your baking skills to the max with mixing, baking, cutting and assembling.
