Perfect Pairs

Shepsog

Presented by: Grafton Village Cheese

Shepsog is the Algonquin word for "sheep," which once covered Vermont's hillsides during the booming wool industry of the 19th century. Made from unpasteurized sheep and cow's milk and aged a minimum of 7 months, Shepsog has a firm texture with aromas of cultured butter and fresh buttermilk, alongside bright flavors that are lemony and sweet, with notes of caramel and a clean, nutty finish. This cheese pairs nicely with Earthy Reds such as Zinfandel, Primitivo, or Sauvignon Blanc.


Roth Gouda

Presented by: Emmi Roth

Roth Gouda is mellow and mild with a touch of sweetness that pairs well with crisp white wines. It is made in Wisconsin, where green pastures, fresh air and rBST-free milk allow Rothcheesemakers to craft this Dutch-style classic.


Caciotta Piccànte

Founded in 1925, Monti Trentini has an especially long tradition in the production of mountain cheeses made from the milk of mountain-grazing cows. Among these is Monti Trentini Red Chili Peppers Caciotta, which thanks to its strong, distinctive and hot taste, is perfect to enjoy with red wines with bold and fruity flavors such as the Sicilian Nero d'Avola.
