FROM UWRF TO THE

MEAT INDUSTRY


Recent UWRF graduate Kelsey Kuehni has been hired as the HACCP Coordinator at Cresent Meats (Cadott, WI). While a student, Kuehni worked for both the Humane Handling Institute and UWRF Meat Lab. We recently asked her some questions about her experiences.

 

Kuehni was excited by the opportunity to work at Crescent Meats due to their support of the county fair, and involvement with the Carcass Contest. “As a kid I had a great experience getting to help with the contest. I got to meet the workers and see the plant,” she said.

 

“My role with the Humane Handling Institute has helped me tremendously with my job at Cresent Meats," she said. “We got hands on experience handling cattle, captive bolt placement, stunning practice and learned the USDA standards for handling animals," she said. “Being able to get the hands-on experience and connect with meat industry owners was important.”

 

Kuehni also credits her success to working at the UWRF Meat Lab, and the learning opportunities it provided. “I learned a lot about my job as a HACCP Coordinator while being at the Meat Lab. Being able to learn each department played a major role in enriching my understanding of HACCP,” she said.

 

Kuehni’s current position at Crescent Meats brings new challenges every day. “My job as a HACCP Coordinator requires a lot of problem-solving skills. Running into different issues and learning how to deal with it has been a challenge but rewarding,” she said. “I like being able to work with great people that care about food safety and that have the same passion for the industry.”  She describes her role as “exciting because it is a growing company. Being a HACCP Coordinator means that I will continue to expand my knowledge each day.”

The fee to attend a workshop is $1,000 per trainee. Most qualify for free registration from DATCP and AMSA. No registration fees are paid out of pocket. You simply need to attend and cover your own travel expenses. For out-of-state attendees, Kinder Ground is providing up to $500 in travel reimbursement. Register to confirm if you qualify.
