Market Updates
At the farmers market, spring is a time of tenderness. Recently dug potatoes cook up in just minutes, and garlic is so young, it doesn't even need to be peeled. From the freshest crops available, to budding businesses, the farmers market offers exciting, new things to look forward to every week. Please share this gift with as many community members as possible, by sending only one member from your household to shop this Saturday. Thank you again for your cooperation and patience.

This weekend we welcome a new vendor who will be popping in this season, Orange & Blossom. Marisa Kroes specializes in plant-based, farm-focused deserts that you wouldn't even know are vegan or gluten free. After a break, Sacred Summit Herbal Elixirs and Chocolate returns with sustainably sourced, bean-to-bar chocolate, and kombucha. 503 Distilling is also back this weekend with an array of craft canned cocktails produced right here in Oregon. Swing by to pick up all of your groceries this weekend. We have you covered.

Recipes of the Week: Early Summer Vegetable Sides
Cucumber Fresh Herb Salad
1 1/2 lbs. thin-skinned cucumber, halved lengthwise and seeded
1/2 C thinly sliced red onion
2 T chopped fresh mint
2 T chopped fresh dill
2 T red wine vinegar
1 t chopped fresh oregano or marjoram
1/4-1/2 t kosher salt

Cut cucumbers in half again lengthwise, then cut crosswise into chunks. Toss in a large bowl with remaining ingredients and salt to taste. Serve chilled.

Roasted Carrots With Dill
2 lbs. carrots (younger is better)
2 T olive oil
2 T chopped dill
salt and pepper to taste

Preheat oven to 400. Scrub carrots and trim. Place on a greased sheet pan and drizzle with oil. Toss to make sure they are evenly covered and sprinkle with salt and pepper.

Roast for 20 minutes, then remove and turn over. Sprinkle with 1 T dill and roast 20 more minutes. Remove from oven and sprinkle with remaining dill.

The long-awaited Hood strawberries are here! These little deep-red bursts of flavor are an Oregon treasure, and an ephemeral one. The season for Hoods usually only lasts about three weeks, so get them while they last!
