Cucumber Fresh Herb Salad
1 1/2 lbs. thin-skinned cucumber, halved lengthwise and seeded
1/2 C thinly sliced red onion
2 T chopped fresh mint
2 T chopped fresh dill
2 T red wine vinegar
1 t chopped fresh oregano or marjoram
1/4-1/2 t kosher salt
Cut cucumbers in half again lengthwise, then cut crosswise into chunks. Toss in a large bowl with remaining ingredients and salt to taste. Serve chilled.
Roasted Carrots With Dill
2 lbs. carrots (younger is better)
2 T olive oil
2 T chopped dill
salt and pepper to taste
Preheat oven to 400. Scrub carrots and trim. Place on a greased sheet pan and drizzle with oil. Toss to make sure they are evenly covered and sprinkle with salt and pepper.
Roast for 20 minutes, then remove and turn over. Sprinkle with 1 T dill and roast 20 more minutes. Remove from oven and sprinkle with remaining dill.
