The food passengers eat on US airlines is prepared by caterers on the ground who incorporate the latest food trends and use ingredients that taste good in the air. "We don't try to add salt since it dehydrates people, but instead add more flavor profiles into our meals," says Raphael Girardoni, managing director of food and beverage at American Airlines.
