Augusto’s

Augusto’s Green Sauce, located in Tulsa, Oklahoma, was launched when it won the Fiery Food Challenge in Ft Worth, Texas, three years in a row. The spicy, creamy, delicious sauce can be used in a variety of ways, including on fresh vegetables, baked potatoes, fish and chicken; as a sandwich spread and salad dressing; and more. The sauce can be found at Hideaway Pizza in Stillwater, Amish Cheese House in Chouteau, Reasor's and Whole Foods.

“I have been working with the FAPC team for more than 10 years now,” said Tracy Furr, owner of Augusto’s. “They are always there to help, answer questions and guide me through this sometimes-complicated process. It is so important that small businesses have a resource they can reach out to and help them at any time. Thank you FAPC and everyone involved; I truly could not have done it without you.”

Feasibility of Producing, Processing and Packaging Chotaw Heritage Products

Rodney Holcomb, agribusiness economist at FAPC, has been examining production potential for various Choctaw cultivars of corn, beans and squash. Knowing the production potential for the raw products, FAPC has examined the processing and packaging option for these products to be offered at the Cultural Center Gift Shop, other stores and the tribes's food program.

They have examined the costs of building and operating a commercial kitchen for these purposes and are including information on low-technology and low-cost drying techniques to preserve products via on-farm processing. They are formulating a survey instrument to elicit feedback from Choctaw tribal members regarding their interests in various production options and their preferred market channels for these products.
