Thanks to YOU, we exceeded our year-end goal and raised over $30,000 to support health equity and environmental stewardship programs. This funding is more important than ever as we've seen first-hand how the pandemic has affected food access, mental and emotional wellbeing, and overall health for youth, families and adults.
Because of your generosity, here's how we'll continue to grow in 2021.
- Provide healthy, locally-grown food to participants at our weekly produce stand
- Keep our 275 Kitchenistas® connected through critical trainings and support opportunities
- Engage high school students in internships where they learn about nutrition, growing their own food, and civic engagement
- Work in partnership with our local school districts to ensure elementary students are engaged and active through our virtual programs

Jeni Barajas, our Environmental Education Specialist, was awarded with the 2020 Environmental Educator of the Year award by the California Association for Outdoor and Environmental Education in the Southern California Region.
We're so proud of you, Jeni! In nearly two years at Olivewood she has worked extensively to connect youth to environmental science through hands-on learning, outdoor activities, and stewardship programs including:
- Leading high school internships and programs: Building Sustainable Communities Youth Leadership Program, Sustainable Agriculture Internship, and the Garden to Kitchen Internship
- Growing and producing food for the community during the pandemic, providing fresh and organic produce every week for up to 70 families
- Devoting time to teaching citizen science to elementary students through monthly Garden Explorer classes
In Jeni's free time, she enjoys cultivating her home garden skills by taking agriculture and environmental science classes at her local community college. Additionally, she is a long standing Girl Scout volunteer, volunteer trainer, and national delegate.

This Recipe Is Spud-tacular!

Cauliflower Mashed Potatoes Made by Olivewood Gardens
Serves 5-6
|
|
|
Ingredients
- ½ head of cauliflower, cut into florets
- salt and pepper to taste
- 2 medium russet potatoes, diced
- ½ cup almond milk
- 1-2 cloves garlic, roasted
|
|
|
|
Instructions
- Chop cauliflower into florets. Steam the cauliflower in a steamer basket over boiling water for 15 minutes. (You can also steam in the microwave: use a microwave safe container with cauliflower and ¼ cup of water and cover for 5 minutes).
- Dice potatoes and boil until soft.
- Once cauliflower and potatoes are ready, combine in a food processor or blender with reduced-fat milk, until you’ve reached desired consistency. Add salt and pepper to taste.
- Feel free to add any extra ingredients for flavor - onions, garlic, chili flakes, cheese, herbs, or anything else you can think of!

Consider adding these additional ingredients to flavor your cauliflower and potato mash: red chili flakes, green onions, finely chopped garlic, minced fresh herbs -- such as chives and parsley -- and shredded cheeses -- such as cheddar, parmesan and mozzarella. Enjoy!

COX is awarding $120,000 in scholarships this year to high school seniors in local communities including San Diego, Santa Barbara, and Orange County.
