As our community slowly starts to open back up, we are prioritizing the mental, physical and emotional health of our staff and volunteers, community members and friends. We appreciate each of you who participated in our survey and provided input to our next steps on how to safely welcome people back to Olivewood Gardens. Over the past ten weeks, students have been virtually learning about the connections between growing food and preparing healthy meals. They explored eating local, cooking with fresh ingredients and basic knife skills. They also planted their own planter boxes and shared their meals with their families. Last week, ten of these amazing Garden 2 Kitchen (G2K) high school interns visited Olivewood Gardens and were awarded their graduation certificates.
Another group of high school students have been meeting all year as part of our Building Sustainable Communities leadership program in partnership with ARTS. They have spent the past few weeks learning from local experts about consensus organizing, community leadership, food systems and placemaking. Later this summer, they will use their knowledge to create and install a garden at a local National City business. We admire the resolve and commitment students have shown while fully participating in the programs and are so proud of their leadership and dedication to building a stronger community.

Try This Month's Featured Recipe: Gluten Free Almond Crackers
|
|
|
Ingredients
- 1 cup almond flour
- 1 TBSP Flaxseed meal
- 1/4 TSP fine salt
- 1 TBSP everything but the bagel spice
- 3 TBSP water
- Parchment paper or silicone baking mat are strongly recommended to use
|
|
|
- Preheat oven to 350 degrees.
- In a medium size bowl add all dry ingredients and mix.
- Add water and mix together until a ball of dough forms.
- Place one piece of parchment paper on your counter or cutting board. Turn dough onto the parchment paper.
- Place another piece of parchment paper on top of the dough and roll out to about an ⅛ of an inch thick. These crackers won’t rise, so the thinner the better for crispy crackers.
- Once the dough is rolled out, cut into 1 inch squares with your knife or a pizza wheel.
- Move dough and parchment onto a baking sheet and bake for 20 minutes - some crackers will be more browned than others. At this stage, gently separate the crackers and take off the ones that are more brown around the edges.
- Place back in the oven for another 5 minutes to crisp up the middle pieces (this step is optional, if you like them not as crispy leave them out of the oven when you remove the first time.)
