Rather than being whole cone, these hops were concentrated (like traditional Cryo) and then frozen! Fresh hops impart a brighter, fresher, greener aroma than dried hops. Think of it as the difference between fresh and dried basil!"

The Black-Eye Susan (Maryland's state flower) was illustrated by Hong Kong artist Carmen Or!"

Sapwood - New Hop Crop 2025
"We brewed this IPA as an excuse to use a couple of the varieties from the fresh 2025 hop harvest. We dry hopped with the two we contracted the most: Citra and Simcoe! The first dose was equal parts standard T90 pellets and then a second dose of equal parts double-concentrated Cryo. Then we dosed it with hop extracts made from our selected hops! The result is brimming with melon, citrus, and mango... that's what we're hoping for anyway as we write this a few days before the hops arrive at the brewery!"

"Our ever experimental and rotating DIPA makes its return with a triplet of varietals we’ve looked to let commingle for some time now.
This one was hopped with hefty doses of Talus, Amarillo, and Idaho 7. As a somewhat smaller production brewery, it can be difficult to maintain some experimentation, and instead continue to focus on regularly produced beers for the sake of consistency and every other production requirement.
This series of experimental beers allows us to fully embrace the idea without the worry that that we don’t have enough of any particular hop to continually brew it, or that if it sucks, we’d have to dump it… and we can assure you, we’ve dumped them before and will do it again if necessary.
The magic derived from the combination of our house ale strain, choices with respect to timing, amounts, and which cultivar and when, has really informed our dry hopping processes across other hop forward beers.
Having said all that, we notice saturated impressions of ripe pineapple, tangerine floral, sweet softer loblolly pine, grapefruit zest, and various candied citrus overtones."
