Do you have a herb garden indoors or out? Many herbs are easy-to-grow, perennials in many regions, delicious, especially when fresh, and full of nutrition and health benefits.

Parsley, sage, rosemary, and thyme, are four classic herbs. In this issue, we will look at some of the advantages of adding Parsley and Thyme to your food and drinks. In the next issue, we will look at Rosemary, and Sage.

Here in North America, even in zone 4, where I live, these herbs mostly grow as perennials and make a great addition to your herb garden.

Fresh herbs taste so much better than dried ones. They have many uses in foods and in other ways like making air fresheners, sachets, and teas.

Herbs can be preserved in different ways for use during the colder months. Recipes and ideas on how to use these herbs are coming.
Parsley, Sage, Rosemary, & Thyme
Why are these four herbs together in folklore and in song?
  • They all grow as perennials in the UK so they have been grown there and used in the cuisine there for centuries.
  • These herbs were reputed to have healthy properties for the body and emotions.
  • In Scarborough, there was a big market and fair and these herbs were some of the very popular items available.
  • The ballad Scarborough Fair, is very old and was sung all over England with variations in the lyrics. A similar ballad, The Elfin Knight, was also sung in Scotland.
Parsley is not just a garnish, it is a powerhouse of nutrition. Parsley can be used in any savoury dishes, added to smoothies and salads and you can even make tea with parsley. It is also a hardy perennial in most regions and is easy to grow. Add it to your garden and enjoy the benefits and taste of fresh parsley.
There are two main types of parsley: Italian or flat-leaf parsley, and curly parsley. They both have a slightly bitter, yet pleasant, taste. Parsley can be added to almost any dish or food.

  • High in vitamins like K, C, and A.
  • Vitamin C has many benefits including improving skin structure.
  • Vitamin K has many benefits including improving bone health.
  • High in antioxidants so parsley helps reduce inflammation & boost immune function.
  • Good source of folate and Vitamin B which helps heart function.
  • When foods are grilled, heterocyclic amines are produced which can cause cancer. Eating parsley helps neutralize the amines produced.
  • Parsley can help with digestion.
Thyme also has many health benefits and is also a hardy perennial that is easy to grow. Thyme can be added to many dishes, and you can make tea with thyme as well.
Thyme is a tiny herb on a tough stem. The taste is slightly bitter, but only mildly so. Thyme goes with almost any dish or food.
Health Benefits of Thyme:
  • Thyme is an excellent source of vitamins C, and A, as well as potassium, manganese, and the B vitamins.
  • Thyme has antifungal, and antibacterial properties.
  • Thyme oil can help reduce mold and fungus in the air or on surfaces.
  • Thyme has anti-inflammatory properties and is used to soothe coughs and reduce lung congestion.
  • Thymol, part of the oil in thyme is used to clear the air, boost your mood, and get rid of pests.

You can make an air freshener with thyme, and make a tea to soothe yourself. Add thyme to your garden and reap the benefits of this tiny but powerful food.
