Inspiration 
The protagonist in Stony Kill is a Brooklyn baker named Joss Ryckman, but the inspiration for her bakery came from a lovely place called Café Le Perche on Warren Street in Hudson, New York.

Like the café in Stony Kill, walking through the front door of Café Le Perch opens into a beautiful European-style bakery with fresh breads, croissants, and all manner of delightful treats. 

Past the bakery is a short hallway with a charming bar that seats a half dozen or so, tucked to one side. 

Beyond the hall is a fetching dining room in dark woods and high ceilings. For summertime dinners, there is a courtyard not to be missed. Warren Street in Hudson, New York, is a fun way to spend a day—the antique shops are amazing, the bookstore is a hoot, and the dining choices are abundant.

LOLLIPIES

Pastry

2 ¼ cups soft pastry flour—for gluten free, use cassava flour in a one-to-one ratio
¼ cup sugar
1 ½  teaspoons salt (scant)

½ cup shortening—non-hydrogenated, Crisco, or lard. 

½ cup unsalted butter

1 egg yolk, lightly beaten

¼ cup sour cream (on the generous side)

Generous Splash of Liqueur—(It is best to use a flavor that compliments your filling, such as crème de cassis for berry pies, or Kahlua for coffee for chocolate tarts.)
Cut the butter and shortening into pats. Cool pats in the freezer until they are cold but not too firm for mixing.
Mix the dry ingredients together. Cut in the pats of butter and shortening until slightly crumbly. Add sour cream, egg yolk, and liqueur. Do not over-mix. The dough should just stick together. If it is too dry, add a little more sour cream. Ball the dough and wrap in parchment paper or plastic wrap. Refrigerate for an hour.

Filling
In the meantime, wash, peel, and core approximately five apples. Chop finely (fingernail pieces). Chop a half pint of washed raspberries, strawberries, or cherries and add to the chopped apples. Add ½ teaspoon of cinnamon, ¼ cup of sugar, and the juice of a quarter lemon.
Directions:
On a well-floured board, silpat, or parchment paper, roll out the dough. A French pin works best. Roll out from the center in one direction only; do not roll back and forth. Cut heart-shaped pieces, approximately 2-inches by 1½-inches. Brush all with egg wash, (two eggs whisked in a bowl.)
Prepare “lollipop sticks” by cutting equal lengths, approximately  5 inches from thick skewers. Soak in water.

Dip sticks into egg wash and press into bottom crust.  Add a teaspoon of filling to bottom crust. Place another heart-shaped cut-out that has been washed in egg wash.  Press, crimp with an hors d’oeuvres fork, add vent holes, and refrigerate for one hour. Just before baking, sprinkle with cream or whole milk and dust with sugar.
This recipe makes a tender piecrust due to the addition of sugar. For a crisper crust reduce the sugar, and also reduce the sour cream in equal amounts. The balance between dry and wet ingredients creates great pie crust pastry.
Line lollipies on a parchment lined jelly-roll pan and bake at 375º. Bake until golden brown. Cool, and then wrap in cellophane candy wrappers, and tie with ribbon.
