Recipe of the month:

Ratatouille

Ingredients -for 8 servings

VEGGIES

2 eggplants

6 roma tomatoes

2 yellow squashes

2 zucchinis

SAUCE

-2 tablespoons olive oil

-1 medium white onion, diced

-4 cloves garlic, minced

-1 red bell pepper, seeded and diced

-1 yellow bell pepper, seeded and diced

-kosher salt, to taste

-freshly ground black pepper, to taste

-28 oz crushed tomatoes

-2 tablespoons thinly sliced fresh basil

HERB SEASONING

-2 tablespoons thinly sliced fresh basil

-1 teaspoon minced garlic

-2 tablespoons finely chopped fresh parsley

-2 teaspoons fresh thyme leaves

kosher salt, to taste

-freshly ground black pepper, to taste

-4 tablespoons olive oil

Instructions

-Preheat the oven for 375˚F (190˚C).

-Using a sharp knife or a mandoline, slice the eggplant, tomatoes, squash, and zucchini into approximately ¹⁄₁₆-inch (1-mm)-thick rounds, then set aside.

Make the sauce:

- Heat the olive oil in a 12-inch (30-cm) oven-safe pan over medium-high heat. Sauté the onion, garlic, and bell peppers until soft, about 10 minutes.

-Season with salt and pepper, then add the crushed tomatoes. Stir until the ingredients are fully incorporated.

-Remove from heat, then add the basil.

-Stir once more, then smooth the surface of the sauce with a spatula.

-Arrange the veggies in alternating slices, (for example, eggplant, tomato, squash, zucchini) on top of the sauce, working from the outer edge to the center of the pan. Season with salt and pepper.

-Make the herb seasoning: In a small bowl, mix together the basil, garlic, parsley, thyme, salt, pepper, and olive oil. Spoon the herb seasoning over the vegetables.

-Cover the pan with foil and bake for 40 minutes. Uncover, then bake for another 20 minutes, until the vegetables are softened.

-Serve hot as a main dish or side.

-The ratatouille is also excellent the next day–cover with foil and reheat in a 350˚F (180˚C) oven for 15 minutes, or simply microwave to desired temperature.

Enjoy!

What to expect this month

Hello September!

This month we will be having our Denton yard sale day on September 2nd: 8:00am-12:00pm!

Denton Yard sale Day is FREE to everyone entering the park looking to shop/ attend! Parking is also FREE

The Denton Yard Sale Day was created as a way to bring together the entire community and have fun while giving the opportunity to clean out your homes and sell it at an affordable price. It allows the chance to help those who need affordable clothes and can get them at cheap yard sale prices!

We aim to stretch the yard sales from the Denton FarmPark to the town of Denton, making it a activity people will travel to come see and be apart of. We have a ways to go if we wish to achieve that dream so please tell your friends!

*Bath houses on the property will be unlocked these days for your convenience; please help us keep them as clean as possible. Also remember trash goes in Trash bins. We thank you for cleaning up after yourselves so that we can continue to have our Yard sale days.

For those wanting to set up:*** Remember its YARD SELL STUFF ONLY!

You show up at 1072 Cranford rd (main entrance) OR 4259 Handy Rd (our south Gate Entrance) at 7am that morning and it is $5 per car/truck/trailer load!

The price breakdown is $5 per load. (meaning a unloaded truck with a loaded trailer is 1 load, a car/van with items = 1 load and a Loaded truck with a loaded trailer is 2 loads)

It is cash only, so be ready to hand the money out the window to our staff as you drive in the park. You then will enter and Set up along the road sides in the grass and use the amount of space you NEED.

** This is a yard sale Only so if you are a custom/craft vendor or small business then I’m sorry to say you’re not allowed to set up with those items! There is plenty of opportunities to sell that throughout the year!

The point of a huge yard sale is to get rid of unwanted items from your homes and to declutter from spring cleaning. Selling the items at a fair or low price makes it easy for your stuff to sell and less items for you to take home!!

*You must provide your own set up; meaning tables, blankets, chairs or anything else you may need is provided by you, we just provide the location and social media advertisement. If anyone in town wishes to add their own home made sign (like the one pictured) to catch the drivers attention leading to the FarmPark that would be appreciated, if anyone has questions please ask. You will have to be at the park NO earlier than 7:00am at our 1072 Cranford rd  OR 4259 Handy rd. Denton, NC 27239 address on the day of the sale. The Sellers will know we “open” at 8am so try to be ready.

**Buyers/yard sell enthusiasts

It is FREE for you to enter the park and parking is along the hill and in the campground at the south gate.

So just come on out and enjoy the Denton Yard Sale Day starting at 8am at the Denton FarmParks South entrance – 4259 Handy rd Denton NC 27239!!

Lets see how big we can make it.

*Please be respectful of others, *Bath houses on the property will be unlocked these days for your convenience; so please help us keep them as clean as possible. Also remember trash goes in Trash bins.

Staff will be attending on their day off and will ask you to leave if they fell it necessary, under ANY circumstance, this may not be a normal event but our family friendly reputation still stands.

Lastly this is not a traditional event, so the office will be closed, no fishing is allowed, children must be watched and not allowed to play on equipment or buildings but can play in the pit in the grass while being supervised, nobody will answer phones and the FarmPark is not held responsible for anything should it happen!

Making Birthdays Magical Again

By: Christina Frost

Whew! We made it through August and can now slowly usher in the fall…Kiddos young and old have started back to school and many of us are already coordinating calendar dates for the upcoming holiday season.

For me though, September is about something else all together and that is birthdays. My little sister’s birthday is smack dab in the middle of September and because it’s the first thing I look forward to after August, it always feels extra special to me.

Birthdays are interesting. When we were kids, for most of us, birthdays were something we looked forward to! There was the exciting chance we could go to a friend’s house to swim in their pool, eat cake, wait with bated breath as they opened our presents, and happily leave with a fun goody bag.

For our own birthday, we looked forward to it for months!

“I’m almost 6,” “Almost 7,” “Almost 8!”

We picked out a theme and cake flavor, and made a list of everyone we wanted to invite (not to mention, the more people we invited, the more presents we got!) It truly was a magical day and meant to be celebrated to the fullest.

And then…we started to grow up…Soon we were worrying about how many calories were in cake, or the fact that aging wasn’t something to be proud of, or maybe making friends became more complicated so we had fewer of them, and celebrating ourselves for any reason became awkward and embarrassing.

I have a daughter now and when I walk into the room she is so excited to see me and it never crosses her mind I wouldn’t be excited to see her too. In six months I can’t WAIT to celebrate her first birthday even if she won’t remember it.

It breaks my heart to think that someday she might not look forward to her birthday–or dread it even.

Maybe as adults we need to re-prioritize our thoughts around birthdays…

Instead of bemoaning our growing age every year, we can instead count our blessings that we made it one more trip around the sun. There are so many people who don’t make it to our age and there are so many others who wish they had.

Also, when did it stop being cool to celebrate ourselves? I’ll tell you what, someone out there loves you and wants you to feel special on your birthday. Our very existence is an everyday miracle and that is something to cherish.

And okay, maybe it’s hard to reorient our brains to celebrate ourselves on our birthdays, so maybe we can make a little extra effort to celebrate someone else’s birthday.

For my birthday this year, one friend sent me mini-cupcakes at work and it was the only cake I got on my birthday, and I was so incredibly thankful to receive it!

So maybe someone’s birthday is coming up in our life and maybe we can plan something or put something in place beforehand.

It doesn’t have to be a giant surprise party or buying extravagant gifts…It can be something as simple as grabbing someone and tell them, I’m taking you out for a fancy coffee for your birthday, or send them some flowers or frozen steaks. Even a sweet or funny card goes a long way.

In other words, lets honor that little kid inside us that loved making their birthday and other people’s birthdays awesome! THEY would want to celebrate so lets bring the birthday magic back.
