Our Diagnostic Imaging registration area will be relocated during the first part of this renovation process, but rest assured that your care will not be impacted. We are pleased to introduce a new provider! Dr. Victor Holmes specializes in Ophthalmology and is returning to MMHS and our community after practicing in Southern California. Dr. Holmes is a Harvard Medical School graduate; highly-trained and experienced, and ready to address eye care treatment such as:

Eat to Beat Diabetes

Thai Peanut Squash Soup

2 T olive oil

1/2 C finely chopped onion

2 T Red curry paste

1 T Grated fresh ginger

2 Cloves garlic, minced

2 10-oz froz.,cubed butternut squash thawed

1 13.5 oz Can unsweet. light coconut milk

1/4 C Reduced sodium veg./chicken broth

1/4 C Natural peanut butter

2 T Lime juice

1/2 tsp. Salt

Plain yogurt, chopped cilantro and/or Sriracha sauce


  1. In a large sauce pan heat oil over med. heat. Add onion,cook 2 mins, stirring frequently. Stir in curry paste ginger, garlic. Cook, stir in squash coconut milk, broth. Bring to boil. reduce heat. Simmer 5 mins., reduce heat to low. Stir in peanut butter, lime juice and salt.
  2. Using a an immersion blender carefully blend soup until smooth, or cool slightly and transfer to a blender. Cover and blend until smooth.
  3. Serve with toppings if desired.
