Homebuyers are ramping up this spring
According to REALTOR® Magazine, home buyers realize they need to be quick with their offers. 65% of buyers recently surveyed said they’d make an offer within 3 days of viewing it if they’re interested. 20% say they’d make an offer immediately, according to Bank of America’s new 2022 Homebuyer Insights Report, based on about 2,000 responses. Homes spent an average of 17 days on the market in March. 87% of homes sold in March were on the market for less than a month, according to National Association of REALTORS® data.

Ceri (our lop-eared Corgi) says...
I'm adaptable and playful. I often look sweet but looks are deceiving. Today I unzipped two suitcases to have my way with John’s clean socks. I can count, too. I tried so hard to be quiet through John’s first cup of coffee this morning and after the second cup of coffee was consumed I just couldn't help myself. Denise's Cooking Corner - Caesar-Roasted Swordfish
|

Ingredients
2 large garlic cloves, chopped
1/4 cup chopped fresh parsley
1 tablespoon anchovy paste
2 teaspoons Dijon mustard
1 cup good mayonnaise
1 tablespoon grated lemon zest (2 lemons)
3 tablespoons freshly squeezed lemon juice
Kosher salt and freshly ground black pepper
3 pounds center-cut swordfish steaks, 3/4 to 1 inch thick,
cut into 6 portions
1/2 cup chopped scallions, white and green parts (4 scallions)
2 tablespoons good olive oil
3 tablespoons drained capers
Lemon wedges
Directions
1. Preheat the oven to 500 degrees F. (Be sure your oven is very clean.) Line a sheet pan with aluminum foil.
2. For the Caesar sauce, place the garlic, parsley, anchovy paste, and mustard in the bowl of a food processor fitted with the steel blade and pulse until the garlic is minced. Add the mayonnaise, lemon zest, lemon juice, 1 teaspoon salt, and 1/2 teaspoon pepper and pulse to make a smooth sauce.
3. Place the swordfish steaks on the pan and sprinkle both sides generously with salt and pepper. Set aside one third of the sauce to serve with the cooked fish. Spread the fish on one side with half the remaining sauce, turn the fish, and spread the remaining sauce on the second side. Sprinkle with the scallions and allow to stand for 10 minutes.
4. Roast the fish for 10 to 12 minutes, until the center is just barely cooked. Cover the fish with aluminum foil and allow to rest on the pan for 10 minutes.
5. Meanwhile, heat the oil in a small sauté pan until very hot, add the capers, and cook for 30 to 60 seconds, until they start to pop and are a little crisp. Serve the swordfish hot with the lemon wedges, frizzled capers, and the reserved Caesar sauce.

Denise's Book Corner - The Midnight Library by Matt Haig

If I have to go to purgatory, I definitely want it to be in the Midnight Library! I could just read to my heart's content. But I would have to do more than that, I would have to replay my life, decisions, regrets and potential. This novel is about the choices we make.
Nora Seed, unhappy with her life choices, tries to commit suicide but instead ends up in a library managed by her school librarian, Mrs. Elm. The library is filled books and stories of her life had she made different choices. For instance, in one possible alternative, she tries to reunite with her boyfriend and finds herself married to him but doesn’t turn out as she expected.
Dealing with regret, potential, and reflection, the novel pushes the reader to think about our own choices and decisions, as well as looking toward the future. I think both teens and adults would enjoy it. It's a short read that will get you thinking and it may awaken you to how much unlocked potential you have! I love philosophical conundrums like that and this novel suited my mental wanderings to a tee. Reflection without regret can never be a bad thing, right?
