HAPPY EASTER FLASHERS!

  Easter was always one of my favorite holidays as a child. Not only because of the egg hunts and Easter baskets and candy, but it meant that I got a new dress. Being the third in a family of five daughters, most of my clothes were hand-me-downs from my older sisters, but on Easter we all got new dresses.


Then there were the Easter gatherings at my uncle's house. What a blast! While the 'adults' were having what they called 'fun', we kids were having what would definitely be defined as the best of FUN! Hundreds of eggs were hidden. There was of course the golden eggs, but more importantly, there were the eggs that awarded live ducks and chicks. Yes, yes, yes! Every parent's dream 'party favor'. We would always leave with a few of the chirping or quacking little birds. I remember loving the way the little ducks would follow behind us quacking all the way! It made me feel quite important to be followed by these little waddling, webbed footed, friends! In my opinion every child should experience that!... Or adult! That's right. It is never too late! I saw a sign a couple of weeks ago that Tractor Supply had live chicks! It took everything I had not to march right in and pick out a couple of chicks that would cheer and chirp as we walked out ... But, common sense got the better of me and I figured I had enough on my plate at the moment.


All of my wonderful memories are serving a dual purpose these days as we face our first holiday, which we loved to celebrate as a family, without two of the most important people in my life! Creating memories is so important! Start your own traditions, FLASHERS! You will be so glad you did! However you celebrate Easter or Passover, you too are creating memories for your families. The spiritual message of this holiday is one of HOPE! Hope is one thing that we can all keep in our hearts. Hope is uplifting and improves our outlook and can change our mood in an instant. As you probably know...I love little bits of inspiration. Did you know that Dove Chocolate candies have a message on the foil wrappers. Yes, there is a message...Go buy some chocolate and make sure you read the message! Some of my favorites:

* Always make your past self jealous

* Be fearlessly authentic

* Book the flight

* After every storm there's a rainbow, no matter how long it takes to show up


Those are some good ones aren't they? Stay hopeful and inspired, FLASHERS! Have a wonderful Easter weekend and rejoice as we Christians celebrate the resurrection of our Lord and the defeat of death with the hope of salvation!

RECIPE OF THE WEEK

EGGS BENEDICT FOR EASTER BRUNCH

This recipe makes 8 single servings. For more guests or double portions, increase ingredients accordingly. 

  

OVEN-BAKED POACHED EGGS

Pre-heat oven to 375 Degrees

Vegetable oil or cooling spray

8 large eggs

Boiling water

Chopped chives for serving


PREPARATION:

Put a few drops of oil into 8 muffin cups or use oven spray and add the eggs. Add 2 tablespoons boiling water into each cup and carefully transfer to the oven. Bake in the center of the oven until the whites are set and the yolks are still runny, 11 to 13 minutes.


EASY BLENDER HOLLANDAISE SAUCE 

Ingredients:

4 egg yolks separated from whites 

1/4 teaspoon Dijon mustard

1 tablespoon lemon juice

1 dash tobacco sauce

1/2 cup butter

  1. In the container of a blender, combine the egg yolks, mustard, lemon juice and hot pepper sauce. Cover, and blend for about 5 seconds.
  2. Place the butter in a glass measuring cup. Heat butter in the microwave for about 1 minute, or until completely melted and hot. Set the blender on high speed, and pour the butter into the egg yolk mixture in a thin stream. It should thicken almost immediately. Keep the sauce warm until serving by placing the blender container in a pan of hot tap water.


FINISH

Butter and toast 4 split English Muffins. You can do this in the oven while you are cooking your eggs. Cover each half of your warm muffin with either deli-sliced ham or a thick slice of your favorite Canadian ham that you have browned in a frying pan. Top each with a Poached Egg and with Hollandaise Sauce. YUM!


NOTE: You may want to double the sauce recipe to top fresh cooked asparagus to serve as a side. Or try a side of pan roasted cherry tomatoes and/or aside of fresh fruit salad to complete your brunch!


United Way of IRC St. Paddle's Day Pickleball Tournament Was A Smashing Success!

History was made as 72 players, comprising 36 Men’s, Women’s, and Mixed Doubles teams, came together to participate in the inaugural St. Paddle’s Day Pickleball Tournament, benefiting the United Way. Hosted at Dick Bird Park, this event brought together pickleball enthusiasts of all ages and skill levels for a day of spirited competition and community support.

 

Under the expert guidance of Tournament Director Dereck Prince, players engaged in a round-robin mixer, with teams divided into two brackets based on their experience levels. From ages 12 to 60+, participants showcased their skills and passion for the sport in an atmosphere of camaraderie and sportsmanship.

 

In a thrilling display of talent, the father-son duo of Mark and Milo Berger took home the gold medal in the 3.5+ Division while Noah Johnson and Abigail Mooney emerged victorious in the 2-3 Division, securing a gold medal for their outstanding performance. Award winners were rewarded with Bread & Butter pickleball paddle sets and paddles, while those who experienced the unique fate of being "pickled" (scoring 0) took home generous jars of pickles graciously donated by Publix Super Markets.

 

The event was not only about competition but also about celebrating the spirit of giving back. A heartfelt thank you goes out to our Silver Sponsors for their invaluable support: Boston Retail Solutions, In Motion, Kmetz Elwell Graham and Associates, and Schlitt Services.

 

Amidst the intense matches, the atmosphere was vibrant with a music playlist curated by Doolin Dalton, yard games, and even tricycles from the annual Trike Wars Block Party for both spectators and participants to enjoy.

 

Adding to the excitement, a raffle featuring coveted prizes such as sneakers and gear from Runner’s Depot, a Bread & Butter paddle set, and entry to the United Way Citrus Golf Tournament provided additional opportunities for attendees to win big and support a worthy cause.

 

The success of the inaugural St. Paddle’s Day Pickleball Tournament would not have been possible without the dedication and enthusiasm of all participants, volunteers, sponsors, and org
