Happy Friday and welcome back to another week of Live Oak Farm CSA...


Things are green. Things are growing.

We're busy. We're real busy...

Spring has not only sprung, it's been shot out of a cannon.

New bed building, bed flipping, greenhouse work, up-potting our nursery (Reminder to check out our April 22-23 Plant Sale!), mowing, weeding, moving, and grooving. We're dancing into Spring and all the work & spirit of refreshed earth and new inspiration for our farming. We're happy you're along for the ride.


For our recipe this week we use quite a few of the components in your produce box to make Grilled Salmon Pesto Paninis. A good piece of fish plus all the goodies of aromatic fennel & fresh pesto sing between grilled bread. A great use of fennel fronds too.

We're excited to feature Bedstone Breads in this week's CSA to all, whether you've had introduction to these breads in our farm stand, or this is your first time experiencing at home. The power of fresh bread.

We return where we left off last week with another instrumental by Yesca (from the Up in Smoke soundtrack, 1978), called Strawberry's. In total, a mix of French fuzz, deep groove, instrumental experimentation, and good old-fashioned rock & rock. Enjoy these tunes in your kitchens, gardens, patios, and porches this weekend.

Live Oak Farm Playlist Pairing

Grilled Salmon Pesto Panini


Ingredients:

1 Bedstone Bread loaf

1 Fennel bulb, sliced into rounds & fronds chopped

Fish fillets (Salmon, Steelhead, ect)

1 clove garlic

1/2 cup slivered Red Onion, or grilled Spring Onions

spoonful, of LOF Fava Leaf Pesto

1 Meyer Lemon

handful of Red Butter Lettuce leaves

handful of Spring Greens

Live Oak Farm Herbal Tea Dressing

Salt & Pepper

Butter


Method:

Rinse and pat dry your fish. Season & set aside.

I like to use a bit of our Live Oak Farm Herbal Tea dressing as a quick marinate for even more flavor. Or default to a squeeze of Meyer Lemon juice.

Slice bread into sandwich-sized slices (2x per panini), butter & set aside.


Heat a cast iron skillet or pan (you can also grill), to medium-high. Add butter and garlic when hot. Sweat your onions and sliced fennel bulb until translucent and slightly softened. Remove and grill your fish fillet. You'll want to achieve a good crisp on the outer sides with high heat. Remove from heat at medium-rare doneness. Set aside.


Add base layer of bread, butter side down to the hot pan. Add to it, fish fillet, a spoonful of Fava Leaf Pesto, grilled onions, garlic, fennel & fronds. Add greens and your top layer of bread. Flip and smash. You can also utilize this step in a proper panini press or waffle maker. Slice, serve, & enjoy warm.
