Happy Friday and welcome back to another week of Live Oak Farm CSA...


This week marks our last of our current Summer quarter of CSA. Take a peek below for our FALL calendar, launching without delay in its first week next Friday, August 4th. Current members look out for renewal communication & billing in the week ahead, and new members welcome!

For our featured recipe this week we highlight our first crop of Tomatillos and Lemon Basil in an aromatic & summery Tomatillo Basil Shrimp Stir-Fry. Once you make the base sauce, you can add to grilled fish, roast chicken, steak tacos, or anything else that comes to mind. Bright & fresh, this recipe is great for the warmer days of the summer season in front of us now.


Lastly, we welcome you to enjoy our weekly music playlist.

We lean on some of the groovier instrumentalists this week- Jimmy Smith, Grant Green, Johnny "Hammond" Smith, Gábor Szabó, Cal Tjader, ect. Collectively we settle into a mid-summer vibe of jazzy guitars, smooth organ licks, and melodic vibraphone covers and originals. To compliment, there is also a triple dose of artists brought together by the Fania record label; a well established name for Cubian & Dominican-led salsa music largely culminating from the 1960's and early 1970's. Artists such as La Lupe, Mon Rivera, Willie Colón, and Héctor Lavoe are represented in this week's mix. Heavy percussion, crisp horns, and sultry syncopated rhythms are sure to beat the heat and get you dancing into your weekend. Enjoy!

Live Oak Farm Playlist Pairing

Tomatillo Basil Stir-Fried Shrimp


Ingredients:

all Tomatillos, husked

1/2 cup Lemon Basil leaves

2 Tbsp fresh Mint leaves

1 Tbsp fresh Tarragon leaves

2 Serrano Chilies, stemmed

5 large Garlic cloves, peeled & halved

1.5 lbs medium Shrimp, peeled & deveined

2 Tbsp Olive Oil

Salt & Pepper to taste

Method:

Using a mortar & pestle combine garlic plus a large pinch of salt and grind to a paste.

Add 1 Tbsp Olive Oil and blend together. Set aside.


Husk your tomatillos and preheat your broiler. Set out the tomatillos on an aluminum foil-covered baking sheet, stem side down. Cook under the top rack of the broiler for two to five minutes until charred. Remove from broiler to turn tomatillos and repeat to cook and char the reverse side. Remove from the broiler and transfer to a blender, being sure to include any of the roasted tomatillo juices collected on the baking sheet. Add to blender chilies, mint, basil, and tarragon and blend until smooth. Season to taste.


Season your shrimp and heat remaining olive oil in a sauté pan over medium-high heat. Add shrimp when pan is hot, cooking each side for roughly one minute each. Remove from pan and set aside.


Add garlic paste to the hot pan and stir for 30 seconds, until fragrant. Add blended tomatillo-herb sauce to pan and stir. Keep at a medium-low simmer for five minutes, stirring throughout until the sauce thickens.

Return shrimp to pan, bring to a simmer and cook for another three minutes, stirring often, until sauce coats the shrimp and shrimp are tender and fully cooked.

Plate & serve, Enjoy!
