Happy Friday and welcome back to another week of Live Oak Farm CSA...


This week our farm team's efforts went into bed flipping & revitalization, full-strength seeding to fill our greenhouses, up-potting starts, and lastly excitedly transplanting & setting infrastructure for our indoor Summer tomatoes! Also this week we're happy to report we've made progress in our crop planning for a robust variety of culinary & herbal plants for medicine. We work closely with the Sonoma County Herb Exchange and other local skin care & medicine makers and look forward to the expanded opportunities here in 2023.


For our recipe this week it had to be pasta. After delivering our restaurant orders & produce boxes to homes and pick-up partners around the Bay today, I've been surrounded by the fresh smells of green garlic and wild onions all day. I feel like a loaf of Garlic Texas Toast. Meyer Lemons, wild onions, pea shoots, and green garlic are just asking for a noodle! Keep it simple while utilizing the flavors of these fresh ingredients backed by a bit of butter / olive oil, and the pasta of your choice. I encourage our advanced class of fresh pasta makers to try these ingredients with fresh ricotta in filled pastas like raviolis or tortellini for tasty dividends.

The magnum opus of this week's playlist is perhaps its last track. A near nineteen minute live version of Prince's classic, Purple Rain. Pulled from a recent 2022 remaster of a March 30, 1985 concert in Syracuse, NY this track is just a snippet of the greatness that is Prince being Prince, (I highly recommend full listen of the album. It's an experience). When adding this song to this week's playlist I did so in thinking that this could finally serve as our extended winter's curtain call. I passed a Petaluma billboard that read: There is Winter. But this is harassment. As year-round farmers, we feel the sentiment.

Let us all savor the the last dance of winter rains, and encourage the new beats of Spring with this week's mix.

Live Oak Farm Playlist Pairing

Mandarin Orange Margaritas


Ingredients:

Pasta of your choice, al dente

4x Green Garlic, thinly diced

1 Cup Wild Onions, diced

1 Meyer Lemon, zested & juiced

2 Tbsp Olive Oil or Butter

2 Tbsp Capers

1/3 Cup Green Olives, pitted

handful, Pea Shoots

grated Pecorino Cheese

pinch, coarse sea salt & black pepper

pinch, Red Chili Flakes


Method:

Begin by bringing a large salted pot of water to a rolling boil. Select preferred pasta and follow cooking directions to bring pasta to a finished al dente doneness (Bucatini is a strong contender for this dish). Remove from water, cool and set aside.


In a skillet, heat butter or olive oil over medium-high heat. Add green garlic, wild onions and cook until tender and translucent. A bit of color / char will add flavor here. Add lemon zest, lemon juice, a splash of white wine, capers, olives, and salt & pepper. Turn heat to low. Add more olive oil and butter to build your desired sauce consistency (leftover pasta water can also be used here). When sauce is at desired consistency and flavors integrated, remove from heat. Plate pasta and toss with veggies and sauce.

Garnish with grated Pecorino cheese, a handful of Pea Shoots, and salt & pepper to taste.

Serve & enjoy!

Reminder - We Recycle! 

We encourage you to return your CSA boxes to your pick-up location, or leave cartons, boxes, and other farm CSA reusables at your doorstep for exchange on Friday delivery days. A big thank you to the many of you that already participate in our recycling efforts!
