Happy Friday!

Pink Pearl Apples, making their debut last week and back again this week are the latest variety in our continued roll-out of Autumn Apple varieties. We love this variety not only for their uniquely signature pink-hued insides, but also for their great acid and crisp skin. Great fresh on their own or for applesauce the sky is the limit with how best to enjoy. This week's featured recipe makes for a simple Fall salad allowing the color of these apples to pop on your plate. The freshness of the salad greens and acidity of the apples and vinaigrette make this a great transitional dish for Summer into Fall and the warm weather expected this weekend.


While we keep one eye to Fall, we also continue to enjoy the bounty of late Summer's tomato season. The farm continues to produce quite a few mixed Heirloom varieties, cherry tomatoes, as well as sauce tomatoes too. Stay tuned for more tomatoes in your weekly CSA or shop our farm stand to continue to enjoy this Summer staple.

The artist Wah Wah Watson is likely not a household name, but it's his track Goo Goo Wah Wah that is exactly where we start this week's mix (taken from is 1976 album Elementary). A member of the Funk Brothers, Watson was a studio guitarist for the iconic Motown label and can be heard on some of the most classic songs from the likes of The Temptations, Gladys Knight & the Pips, The Supremes, The Jackson 5, and others. A mix of old & new, funky, jazzy, soulful and bluesy, this week's accompanying mix has enough to get you through to Monday of your Labor Day weekend. It's supposed to be a hot one, stay cool & enjoy!

Live Oak Farm Playlist Pairing

Apple & Walnut Salad


Ingredients:

Salanova Lettuce head

1-2 Pink Pearl Apples

1/4 Cup thinly sliced Red Onions

3/4 Cup Walnuts, toasted & chopped

1/3 Cup crumbled Feta Cheese


Vinaigrette 

1/3 Cup Extra Virgin Olive Oil

2 Tbsp Balsamic Vinegar

1 Tbsp Dijon Mustard

2 Tbsp Maple Syrup

pinch, coarse Sea Salt

Ground Black Pepper


Method:

Begin by building your vinaigrette. In a small bowl combine olive oil, balsamic vinegar, mustard and maple syrup. Whisk to blend and finally season to taste with salt & pepper. 

You can choose to either roast your own raw walnuts (I prefer the texture) or purchase store bought. Compose your salad by arranging washing greens in a large salad bowl. Thinly slice crescent-shaped Pink Pearl apple slices and lay on top. Finish with red onions, crushed walnuts, and sprinkles of fresh feta cheese. Dress with drizzled vinaigrette (any extra can be refrigerated for a week, covered).

Serve and enjoy!
