Harvesting and Drying Herbs with Rebecca
Learn how to take your herbs from field to teacup with confidence. In this class, we’ll cover when and how to harvest fresh herbs, along with simple post-harvest handling and drying techniques to preserve their flavor and medicine. In the second half, we’ll explore medicinal herbal teas and walk through how to formulate blends for various needs and intentions. Each participant will go home with a custom tea blend they’ve created themselves.

Bring out any saved seeds you have and share the wealth with fellow garden lovers. We will have a plethora of seeds and gardening information to share with you. Sourdough Baking Class
with Patrina
Come learn the easiest sourdough bread baking ever!
You will learn about the care and feeding of a sourdough starter, how to make a wonderful loaf of bread from start to finish and take home dough to bake at home! Every student also takes home their very own sourdough starter! Please bring a mixing bowl (4qt or larger) and your favorite mixing spoon, and a lidded container for your dough ( minimum 12 cups) I get the McCormick storage containers from the dollar tree store.

Acupuncture
The Daoist Traditions Acupuncture Clinic is located in Asheville NC. Their clinical interns are in the final phase of a rigorous four-year academic program and treat patients under the direct supervision of clinical faculty who are NC licensed acupuncturists. Interns complete 900 hours of clinical training to develop their skills as practitioners. The clinic provides 6,000+ affordable patient treatments each year and 500+ free treatments through non-profit partnerships and community events.
Acupuncture has been part of the VA Whole Health System since 2018. It is recognized by the World Health Organization for its benefits for anxiety, depression, musculoskeletal pain, neurological pain, insomnia, stress, and so much more!

Mead Brewing Workshop
with Rob Kinard, Founder, Good Times Mead*
Each student will be leaving with a 1 gallon carboy filled with fermenting must (honey/water/nutrients/yeast), to take home and nurture into a gallon of their own mead!
Learning how to make our own batch of Good Times mead will certainly be a 'good time!'
In this workshop you'll learn how to prep and sanitize your equipment, mix your must (honey/water), start your yeast, add organic nutrients, pitch your yeast, follow the Tailored Organic Staggered Nutrient Addition (TOSNA) 3.0 protocol, and take Alcohol By Volume (ABV) readings.
Each student will leave with a 1 gallon glass carboy filled with fermenting must as well as organic nutrients, which in approximately 1 month (if attended to correctly!) will become 1 gallon of (hopefully!) delicious 14.5% mead!

Tinctures are a simple, powerful way to preserve the herbal medicines growing on the farm and in your own garden. In this hands-on class, we’ll harvest fresh plants from the fields and transform them into tinctures step by step. Everyone will go home with their own handcrafted formulas to begin or expand a home apothecary.

Pottery Session 4 (six-weeks)
Clay & Camaraderie is a six-week pottery workshop designed for active-duty military members, veterans, their families, and VHF volunteers. This program offers structured creative expression, mindfulness-based tactile activity, and community-building. Sessions will be held weekly with additional open lab hours culminating in a participant-led exhibition.
Explore both the fluidity of the pottery wheel with the expressive versatility of hand-building. This class focuses on projects that fuse techniques, challenge your creativity, and build functional, sculptural, and decorative forms. You’ll work on guided projects designed to explore the interaction between thrown and hand-built elements. You’ll learn to see clay as a medium with infinite expression!

Learn simple and cost-effective meal preparation to nourish your body, and support your local community—all while saving time in the kitchen and reducing food waste! Join holistic chef, Sam Raph, for a demonstrative workshop where she'll cook and guide you through making a week’s worth of meals + snacks with a focus on nourishing, seasonal, and locally-sourced ingredients.
For beginner or seasoned cooks—you'll be provided with grocery lists, easy recipes, and knowledge that make healthy eating both affordable and achievable. Kombucha and Ginger Beer Making
This workshop focuses on brewing both, covering the entire process from selecting ingredients to fermenting and bottling. Participants learn to create a ginger bug (yeast culture), maintain a SCOBY (symbiotic culture of bacteria and yeast), and manage both first and second fermentations for maximum carbonation.

Falconry at the Farm
Falconry in Western North Carolina is an up close and personal “hands on” experience with a bird of prey. Guests will accompany a licensed falconer and learn about the ancient sport of falconry.
Those who wish to, will have the opportunity to handle the raptor and experience the exhilaration of having this magnificent bird perch on their gloved fist.
It will be a truly unforgettable experience as the hawk flies from tree to tree culminating with it flying to your fist.
