Farmer Blake has his hands full with our new leaping ladies. We welcomed two new Hansen kangaroos to the farm in mid-March -- Roopunzel, left, and Roolette.
Roolette, a fiery redhead always on the go, is a tiny wild card. Roopunzel is more calm and loves to cuddle. They're 10 months old and each weighs around 8 pounds. They're currently bottle-fed and recently were introduced to Happy Hopper grains, a food made just for kangaroos.
At this age they spend just a few hours a day outside in their pen and the rest of the time in the home of Blake and his family. They hop around the house in diapers and enjoy a good mix of play, rest and snuggles with their human Hansens.

Choose from several types of tours, including Hands-On Tours; Animal Petting Tours; School/Daycare Tours; and Adult Group Tours.
Our most popular tour is the Hands-On Tour, which gives visitors the full farm experience. You'll bottle-feed calves, hand milk a cow, pet our kangaroos, make butter, sample milk and cheese curds, and enjoy ice cream. This tour takes place Monday through Saturday at 3:30 p.m.

Our April Customer of the Month has shopped our Waterloo store since the day the doors opened.
Shonda Fuller keeps coming back for "dependably awesome" foods.
"We buy the ground beef patties, bacon and sausage, and my husband loves the raw honey," she says.
Shonda regularly gets her sweet tooth satisfied with Hansen's Cake Batter ice cream.

Our April Cow of the Month comes from Canadian royalty!
Jendayi is the daughter of the late Hannoverhill Starbuck, one of Canada's greatest bulls of all time. Mr. Starbuck was born in 1979, but his DNA lives on via vintage semen samples that, to this day, are still used to sire finely built Holsteins. (Click here and scroll to previous Cow of the Month Asics to find out how that's even possible!)
Jendayi has had six calves -- three heifers and three bulls. She is 8 years old and is approaching a lifetime production of 150,000 pounds of milk. That's 17,441 gallons!
Built like a tank, she's one of the strongest cows on the farm. Jendayi is short and stout with solid legs and feet. "She's a beast," says Herd Manager Blake Hansen.

Steak Lettuce Wraps with Horseradish Cream | |

Prep time: 15 minutes
Serves: 4

Ingredients:
- 1/2 cup plain yogurt*
- 3 Tbsp horseradish
- 1 Hansen's Wagyu-Holstein ribeye, New York strip or filet*
- 1 container mixed greens*
- 1 apple, sliced (a crunchy variety works best)**
- Salt
- Pepper

Directions
- Stir together yogurt and horseradish; refrigerate until serving.

Season the steak as desired and place on a hot grill. NOTE: Wagyu cooks faster than other beef. It is recommended that steaks are cooked to no more than medium rare for optimum flavor and texture. Allow the steak to rest for 5-10 minutes after cooking.
- Thinly slice the steak against the grain.
- Layer several slices of steak onto your greens and top with crunchy apple slices and a spoonful of horseradish cream.
