The race to your chimney is on......... if you've been good. Please take note of all our recipes listed during this month because they are "monkey-proof" and pretty simple, except for the bodacious party-favorite gravlax which is doable, because I've done it at least a million times over the years. Since it uses Cuervo Gold and all spirtuous liquors shall never touch my lips again, I'll have to make a decision about this as well as rum-balls and other such goodies.

Each year, we’re asked how our seafood needs to be stored for the holidays and my message has always been the same:  keep it very cold!

The coolers you see all around us at our sales sites hold a lot of ice and that’s how we can hold our radically fresh seafood at temperatures of 32-degrees, If you do the same at home, your seafood will easily last you through the week without freezing your precious seafood.

Salmon
Our salmon is cut from whole fish into huge fillets which are the sides of the fish without bones. We cut these sides into collars, center cut narrow strips, center-cut wide cuts, and tails. 
Collars are the fattiest of all the cuts and are best for sushi mi and sushi. Tails are the least fatty and are best for medium, medium well, and well-done salmon. Center-cut strips and wide cuts are best for grilling, broiling and sauteing.
Please specify which cuts you prefer.
