Our salmon is cut from whole fish into huge fillets which are the sides of the fish without bones. We cut these sides into collars, center cut narrow strips 7-8 OZ., center-cut wide cuts16-24 OZ., and tails. 
Collars are the fattiest of all the cuts and are best for sushi mi and sushi. Tails are the least fatty and are best for medium, medium well, and well-done salmon. Center-cut strips and wide cuts are best for grilling, broiling and sauteing.
Please specify which cuts you prefer.

Tell the Truth Always
After my mother died in 1979, my oldest brother, Barry, invited my dad, Ashley, to his house for dinner and my dad asked what they were serving. Barry said "daddy that's rude. You never ask a host what they are serving, to which Ashley said 'if you want me to come for dinner, you're going to have to tell me what I'm going to eat'. Barry told him lasagna and Ashley said 'no way. I don't like lasagna' and Barry said 'you've been eating lasagna all my life' to which ole Ashley replied that when he brought his new bride to a tenant house on his farm up from the swamps of Florence County, SC, she subscribed to all those fancy magazines like Red Book, Good Housekeep and such and decided to try out lasagna. Now, keep in mind this was in the thirties out in the countryside in Wake County, very close to Raleigh, with a well with a bucket, and a Johnny house over a pit with a Sears and Roebuck catalog and corncobs, and a wood-burning stove for heat and cooking, not any fancy digs for this young couple, madly in love, with some serious heat between the sheets, and desperately wanting to please one another. She gave him a list to take to Raleigh for the items she couldn't make from a garden and made a big dish of lasagna for him for his dinner on a cold and rainy night. After he rolled over and lite a cigarette, she asked him if it was good for him...maybe I'm heading down the wrong path here, so allow me to change direction ...she asked him how he liked it and he lied and said he loved it.
Now, let's jump back to 1979.
Ashley said for forty-seven years he had to eat lasagna and act like he loved it,. so hell no he wasn't coming for dinner at their house.
Now Landon, upon hearing this tale of woe, learned a huge lesson and that was I will not lie about anything, ever. If you ask me if your ass is too big for the pants you're wearing, I will tell you the truth. If you cook something I don't like, I will hurt your feelings because I be damned if I want to eat something again that I don't like. If you piss me off, I'm going to tell you the truth. If your breath stinks, I'm going to tell you the truth. I do not lie, cheat or steal and have built a company telling the truth. I am known far and wide for hurting people's feelings, and by offending people because they can't take the truth and try to avoid it.
