Being that tomorrow is Christmas, I wanted to send a beautiful melody for you to enjoy tonight, tomorrow or whenever. I'll be back Thursday with the Shrimpnote and an update about shrimp for your New Year's festivities.

Each year, for years I have always given instructions on how our frozen blocks of shrimp, can be partially used and refrozen. This is still far better than any of the "stuff"sold in other markets. Since we've had our peeled and deveined shrimp that is individually quick frozen, I have been slack in how to take advantage of our 5-pound block boxes, so here 'tis:
Unwrap one end of the shrimp inside the box. Place that end into a colander and run COLD water on as much as you want thawed. Break off a chunk, rewrap your shrimp, place back into your freezer and allow the chunk of shrimp to thaw. That's it .

I tell you all this because our IQF Peeled and deveined shrimp are all gone and we don't expect to have more until shrimp season begins again next year.
