Greetings!

I went to the beach the day after sending last week's Trip Alert, to spend four nights with seven fraternity brothers I've known for over forty years. That's all I'm going to publish about that fantastically, funny beach trip. But, I will definitely return next year.

NC flounder is being more and more regulated by NC Marine Fisheries. Who knows when we'll have any again. We will be sourcing future flounder from Virginia, Maryland and wherever we can find it.

More Updates on our new line of Pork Chops.

Last week, we were disappointed to recieve our much anticipated

Heritage Pork Chops from Hickory Nut Gap Farms in Fairview, NC arriving undersized and frozen. So, we returned them and learned, due to the perishability of fresh pork, it isn't likely we'll be able to get fresh in the future. I contacted my friend, who owns Gate City Butcher Shop, he quickly commented on the difficulty of dealing with small farms that provide the pastured pork. They can't butcher their pigs, and butchering adds days to the age of the pork before it get's to our distributors. As a result, fresh pork will not be available for the time being.

Next week, we will offer 10 oz. bone-in, frozen pork chops again. I've always frozen the ones I bought at Gate City Butchershop, because I always bought so many at one time. They were still fantastic. We hope you will try a few.

 I baked one of these recently in a 450 degree oven on a rack with a pat of butter and it was a perfect medium-rare after 20 minutes baking and a 10 minute rest covered with foil. Be sure to take steak out of the refrigerator an hour before and salt and pepper well. Please let me know how this works for you. Everyone is loving these steaks!
