It's a'looking like a great July 4th holiday, even with thunder showers in the forecast.

It's a'looking like a great weekend for some bodacious seafood from The Shrimp Connection.

Please be aware that flounder catches are being curtailed almost completely by the state and we're having to go to Virginia to find any at all with a higher price.

NC Greentail Shrimp are beginning to peter out and brown shrimp are on the way but are currently too small for us.

CREEKSTONE FARMS NON-GMO ALL NATURAL 

Creekstone Farms, Arkansas City, Kansas

 I baked one of these recently in a 450 degree oven on a rack with a pat of butter and it was a perfect medium-rare after 20 minutes baking and a 10 minute rest covered with foil. Be sure to take steak out of the refrigerator an hour before and salt and pepper well. Please let me know how this works for you. Everyone is loving these steaks!
