Here comes the last weekend of the summer of 2019 and the weather prognosticators are telling us it's a beaut! However, the current weather at our coast is making it difficult for boats of any kind to go offshore to catch all the goodies we need/want for a huge summer holiday weekend so we do as we always do. Drop back and punt. To make our mission of providing radically fresh seafood to our patrons almost year-round a bit more interesting, we are learning that a huge seafood company in northeastern North Carolina has raised the amount of money they will pay for any/all NC shrimp they can get, making our mission more and more difficult. We do a lot of business with this firm for our peeled and deveined shrimp, but don't desire to buy our fresh shrimp from them because of our quality standards of wanting day-boat shrimp and not the shrimp that come off boats that have been at sea for seven to ten days and could have as much as 45,000 pounds of shrimp. These are where the shrimp that have been mauled by nets originate and we don't like those. The weather has also limited local catches of other fish like triggerfish, wahoo, snapper, and grouper.

 I baked one of these recently in a 450 degree oven on a rack with a pat of butter and it was a perfect medium-rare after 20 minutes baking and a 10 minute rest covered with foil. Be sure to take steak out of the refrigerator an hour before and salt and pepper well. Please let me know how this works for you. Everyone is loving these steaks!
