Luckily, we've returned to the early fall season weather we all know and love best described as, "sweaters in the morning and sweating by the afternoon"! But that early spurt of 50-degree weather was a good reminder to make the most of these beautiful mild fall days while we can. Oatmeal Peanut Butter Spider Cookies
A twist on your traditional peanut butter kiss cookies, have some fun making these chocolate, peanut-butter, spider cookie recipe, perfect for entertaining the kids or bringing to a Halloween party. 
Supplies Needed
  • Plastic sandwich bag or piping bag (for melted chocolate)

  • 1 1/4 cups quick-cooking oats
  • 1/2 cup plus 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/2 cup creamy peanut butter
  • 1/2 cup (1 stick) butter
  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed light brown sugar
  • 1 large egg
  • 1 teaspoons vanilla extract
  • 1/4 cup chocolate candy melts or semi-sweet chocolate, melted
  • 24 mini candy eyeballs
  • 24 mini peanut butter cups

  1. Preheat oven to 350Β° F.
  2. In a small bowl, whisk together oats, flour, baking powder, baking soda and salt. Set aside.
  3. Peel open 24 peanut butter cups and set aside.
  4. In an electric mixer bowl, beat peanut butter and butter on medium speed until smooth. Add white and brown sugars and beat until smooth. Add eggs and vanilla and beat again until well-blended. Add flour mixture and mix on low-medium speed just until blended, stopping once to scrape sides and bottom of mixing bowl to incorporate all ingredients.
  5. Drop the dough by level tablespoonfuls onto ungreased baking sheets 2 inches apart.
  6. Bake for 11-13 minutes or just until golden in color (be careful not to overcook to ensure chewy cookie results).
  7. While the cookies bake, melt the chocolate or chocolate candies in a double boiler or in the microwave, stirring every 30 seconds until smooth and melty. Transfer the chocolate to a piping bag or plastic sandwich bag with a tiny bit of the end snipped off.
  8. Remove the cookies from the oven and allow to cool on baking sheet for about 30 seconds, then immediately gently press a peanut butter cup onto the center of each cookie. (The bottoms of peanut butter cups will slightly melt because of the warmth of the cookies, and will adhere after the cookies cool.) Transfer cookies to a cooling rack and allow to cool slightly.
  9. Using the piping bag, create 8 β€œlegs” with the chocolate, 4 on each side. Repeat with remaining cookies.
  10. Use a bit of the melted chocolate on the front of the peanut butter cup and place 2 mini candy eye balls on top, pressing them on.
