I was recently in USA and Canada to visit our U.S. beef and Canadian pork suppliers. I was very pleased with their food safety and hygiene standards, animal welfare and cutting specifications. It was great to see the attention to detail of these smaller packers, focusing on quality rather than quantity. I got to eat at Shake Shack burger and I am hoping they will open a branch at Jewel Changi Airport so that I do not need to go to U.S. to get my fix.
Green walnuts has been a great complement to my cheese board and I look forward to using it when I next cook game meat. Perhaps on the new Paroo kangaroo that we will be launching next month!
