We'll save you all the egg puns, but we are excited to share beyond just veggies this week, and include a taste of our farm eggs from our girls!

We are firm believers that farm eggs simply taste better. Beautifully full yolks, enhanced flavor, freshness and diversity in shell colors make these a fun addition this week.

As this week's featured recipe, we've highlighted the eggs in combination with a few other veggies in this week's box to create one of Tom's favorite weekend breakfasts- a simple cast iron Frittata. His partner Alicia has made him a believer of the power of kale stems both in flavor & texture they add along with wasting nothing in the cooking process of this Saturday morning favorite. From our farm and home to yours, do enjoy and feel free to add your own variations (bacon, cheese, hot sauce, ect)

Should you enjoy this week's eggs, a dozen can be added to any future CSA delivery!
We will have 15 dozen eggs available next week at $8/dozen. First come, first served. Reserve your eggs for inclusion next week by replying to this email with how many dozen you request. Venmo / Paypal payment to follow.
The good news is that as the girls continue to ramp up their production, more and more eggs will become available each week. So if you don't get as many as you'd like, egg laying is scaling up for future weeks.

In this week's farm update we made a big push to get new beds planted. More tomatoes, peppers, eggplant, cauliflower, greens, lettuce heads, peas, beans, basil, and more were transferred from greenhouse to the fields. In return, the greenhouse saw a big mid-week effort to seed roughly 25 varieties of new crops. Everything from Parsley to Mugwort to Armenian Striped cucumbers started their initial growth this week. We also up-potted Korean melons, and a handful of select herbs that will soon see outdoor beds.
