Hello, my name is Jason Arsenault, I’m a person in long term recovery, husband, Mountainside alum, and Recovery Coach Director. I grew up in the kitchen with my mother where she taught me many of our family recipes. About 3 years ago, I became a vegan and learned to cook focusing on a plant-based diet. This dish is one of my Sunday go-to recipes. It’s comforting and filling; the coconut milk and sweet potatoes combine to make it the perfect balance, a bit sweet and a bit savory. Throw some fresh cilantro on top or get some naan to dip - my mouth is already watering!
