Recently, my plant-based journey has taken me on what
seems like an impossible quest to
find a
VEGAN cauliflower pizza crust.
The only ones I could find at the grocery
stores contain dairy and
eggs.
What's a hungry vegan/plant-based girl
to do?
What I always do.
I figure it out.
And then I share it with you!
I knew I needed a binder to hold it
all together, like eggs normally would.
Turns out flax and water did that
brilliantly.
Then I went to work.
I came up with a highly nutritious,
fully
filling, highly satiating crust that
is delicious.
I'm also happy to report that cauliflower
is high
in choline, one of the few vegetables
that are.
Choline is an essential nutrient that helps
your DNA repair itself and is vital for
cell membranes to remain healthy.
Cauliflower also contains lots of water and
fiber, so
it makes you feel full very fast.
This is great news for weight loss.
Can you imagine eating pizza for weight loss?

Vegan Cauliflower Crust Pizza

Serves 3
Must Have
1 large head cauliflower, "riced" in food processor
2 ½ tablespoons flax meal
¼ cup water
1/3 cup oat flour
¼ cup nutritional yeast
1 teaspoon dried oregano
¼ teaspoon onion powder
½ teaspoon garlic powder
Cornstarch for dusting
Toppings (choice of) Broccoli Red Peppers Mushrooms Onions
Must Do
1.
Preheat oven to 375°F. Line a baking sheet or pizza stone with parchment paper.
2.
Steam the riced cauliflower until soft about 10 minutes.
3.
Whisk together the flax and water and refrigerate for at least ½ hour.
4.
Mix together the oat flour, nutritional yeast, oregano, onion and garlic powder.
5.
Squeeze as much moisture out of the cauliflower as possible by placing it in a cheese cloth or nut milk bag.
6.
Add the cauliflower to the oat mixture and add the flax mixture. Stir to combine.
7.
Dust the parchment paper with the cornstarch.
8.
Form the dough into a ball and place on top of the prepared baking sheet.
9.
Press the dough down into a circle about ¼-inch thick.
10.
Bake the dough for about 35 minutes, or until it starts to get crisp.
11. Add your choice of toppings and bake an additional 8 minutes
