Quick Skillet Lasagna
½ cup of chopped onions
½ lb. ground beef
1 can (16oz) tomatoes, low sodium
1 can (6oz) tomato paste, low sodium
1 ½ cups of water
1 tablespoon fresh parsley (optional)
1 teaspoon garlic (optional)
1 10 oz package of spinach, cooked
2 cups cooked egg noodles
¾ cup mozzarella cheese, low-fat
Chop onion. Cook beef and onion in the frying pan until beef is brown and onion is tender. Drain off excess fat.
Add tomatoes, tomato paste, parsley, water, and garlic powder to the beef mixture. Bring to a boil and simmer until sauce is thick. Cook sauce for about 25 minutes.
Cook noodles and spinach according to package directions
Add cooked, drained noodles and chopped spinach to beef mixture. Stir to prevent sticking.
Drop spoonfuls of cheese into the pan.
Cover and heat over low heat for about 5 minutes. Refrigerate leftovers.
